    Examination of phisical parameters of pectin gels extracted from fruit presscakes

    In our study we aimed to investigate the rheologieal and colour characteristics of the pectin gels extracted from presscakes of berries. The pectins extracted from the presscakes of five different fruits such as black-currant, red-currant, raspberry, blackberry and elderberry, were used for the examinations. Tw o commercial materials were applied as controls: apple and citrus pectins. The rheologieal examinations showed that the pectins obtained from the red-currant presscake have the best gelificator properties. The analysis of the colour coordinates revealed that the gel of the citrus pectin used as control is very clear and translucent such as the pectin gel of the red-currant. The pectin gels of black-currant, blackberry, elderberry and raspberry contain a significant amount of colourants, in this way they are very dark

    Investigation of the relation between the colorant content and the colour characteristics of the edible oil based extracts of the paprika grist

    During our work we performed the color measurements of the oily extracts from the Hungarian paprika grist. We defined a color index from the C'lELab color coordinates, by means of which the rank in the redness sequence of the oily colorant extract can be evaluated. Wc established that there was a tight linear relation between the colorant content of the grist expressed in ASTA value and the color index of the oily extract. In case of the oily extracts the coloi index calculated from the data of the color measurement is adaptable to evaluate the coloring capability and via this ii is appropriate for the color classification of the paprika grist

    Screening for Mutations of 21-Hydroxylase Gene in Hungarian Patients with Congenital Adrenal Hyperplasia

    Congenital adrenal hyperplasia (CAH) is a group of autosomal recessive disorders, causing impaired secretion of cortisol and aldosterone from the adrenal cortex, with subsequent overproduction of adrenal androgens. The most common enzyme defect causing CAH is steroid 21-hydroxylase deficiency. To determine the mutational spectrum in the Hungarian CAH population, the CYP21 active gene was analyzed using PCR. A total of 297 Hungarian patients with 21-hydroxylase deficiency are registered in the 2nd Department of Pediatrics, Budapest, Hungary, and their clinical status was evaluated. Blood samples for CYP21 genotype determination could be obtained from 167 patients (representing 306 unrelated chromosomes and 56.2% of the total group of patients). Eight of the most common mutations were screened [In2 (intron 2 splice mutation), I172N, Del (Del: apparents large gene conversion), Q318X, R356W, 1761Tins, ClusterE6, V281L] using allele-specific amplification. The most frequent mutation in the Hungarian CAH population was found to be In2. Our results have shown a good genotype/phenotype correlation in case of most mutations; the In2 mutation is associated mostly with the severe form of the disease, whereas I172N was expressed in a wide spectrum of phenotypes
