Business plan for a healthy juice chain and fruit station in shopping centers
El presente trabajo tiene como objetivo evaluar la viabilidad de la implementaci贸n de una cadena de juguer铆a saludable y estaci贸n de frutas frescas de temporada en tres Centros Comerciales de Lima, de distritos con presencia importante de NSE B/C, a fin de ofrecer una alternativa de alimentaci贸n saludable, personalizable, r谩pida y de buen sabor. Como metodolog铆a se investigaron diversas tendencias locales y globales, para analizar el macroentorno mediante el PESTEL y el microentorno con las cinco fuerzas de Porter; la idea de negocio se valid贸 con la aplicaci贸n de un sondeo a trav茅s del cual se pudo conocer las preferencias de los consumidores por este tipo de productos y las expectativas respecto a la propuesta de negocio.
Asimismo, se dise帽贸 la planificaci贸n estrat茅gica, plan de marketing, plan de operaciones, plan de recursos humanos y an谩lisis financiero, obteniendo como resultado el plan de negocios en el lienzo Business Model Canvas, que permite la visualizaci贸n m谩s clara del negocio.
Para el inicio del proyecto se ha determinado una inversi贸n inicial de S/.532,913, se espera que, al finalizar el quinto a帽o de operaciones, las utilidades despu茅s de impuesto asciendan a S/.491,307. Se concluye que el proyecto financieramente es viable, respaldado por los principales indicadores de evaluaci贸n del proyecto, una TIR de 82%, un VAN de S/.1,339,939.87 y un Tiempo de Recuperaci贸n del proyecto de 2.09 a帽os.The main objective of this research work is to evaluate the viability of implementing a healthy juice and fresh fruit station business, which offers natural juices, fruit bowls with highly nutritious additives and healthy supplements in shopping centers in Lima, at districts with significant presence of NSE B/C, in order to offer a healthy, fast and good-tasting food alternative.
The business plan is based on actual trends, which reflect the consumer's concern for health care, since due to diseases associated with poor nutrition, a healthy lifestyle is being promoted and this motivates consumers to make their food choices more consciously. In addition, the growth of healthy commerce and the consumption of carbonated beverages or ultra-processed foods in juice bars, open up a market opportunity for the proposed business.
Through the application of a survey, it was possible to know the preferences of the consumers for this type of products and the expectations about the business proposal, which allowed to identify the strategy and competitive advantage, which differs from the usual proposals since it poses a healthy eating alternative in shopping centers that are used to offer ultra-processed food, carrying an innovative format that highlights the "freshness" and "health" components through the display of fruits and vegetables as part of the design of the establishment and the presentation of products, also providing a quality customer experience.
Finally, it is concluded that the project is profitable, viable and generates value, supported by the evaluation of financial indicators: NPV: S/.1,339,939.87, IRR: 82% and a payback period of the investment of 2.09 years.Tesi
