    Valutazione delle caratteristiche fisiche e strutturali di un prodotto da forno durante la conservazione (Spianata di Ozieri)

    The aim of this research was the characterization by physical and structural properties, a typical bakery product (Spianata di Ozieri). The samples of two differents kind of spianata were submitted to dynamometric analysis (texture profile analysis - TPA, cut and tension test), color measurement and microbiological tests over 14 days of storage time at 22°C. Three samplings were conducted in different periods of the year to test the seasonality of the production. A collaborative test was carried out at the DISAABA (Sassari University) and in the laboratories of Food Science & Technology (Bologna University). The most important results obtained in this research confirm effectivement that this kind of product is really typical and so the data variability obtained is quite normal. The microciological tests showed a good quality of the product during the normal storage time. Lo scopo di questa ricerca è stato quello di effettuare una prima caratterizzazione fisica e strutturale di un prodotto da forno tipico sardo, la spianata di Ozieri. In particolare, sono state studiate le variazioni di alcune caratteristiche strutturali dinamometriche, fisiche e chimico-fisiche e l'evoluzione della carica microbica durante la conservazione, a temperatura controllata di 22°C circa, di due diversi campioni commerciali di spianata sarda, realizzati artigianalmente e confezionati con metodologie diverse: uno in atmosfera ordinaria e destinato al mercato locale e l'altro confezionato in atmosfera protettiva (40% anidride carbonica, 60% azoto) e destinato alla grande distribuziooe. Sono stati effettuati tre campionamenti nei mesi di luglio, novembre e gennaio, per valutare eventuali differenze dovute alia stagionalità di produzione. Le prove sono state condotte in collaborazione tra i laboratori del Disaaba dell'Università di Sassari e del Corso di Laurea in Scienze e Tecnologie Alimentari di Cesena, Università di Bologna. Sono stati analizzati i campioni delle due differenti produzioni e dei tre diversi campionamenti stagionali, valutando le modificazioni delle caratteristiche fisiche in conservazione, mentre l'evoluzione della carica microbica è stata valutata sulla campionatura di gennaio. Si riporteranno di seguito, i risultati ottenuti durante il periodo di osservazione, della durata di 14 giorni per campioni confezionati in atmosfera ordinaria e di 27 giomi per quelli condizionati in atmosfera protettiva

    Development of 3D-DDTC pixel detectors for the ATLAS upgrade

    We report on the development of n-on-p, 3D Double-Side Double Type Column (3D-DDTC) pixel detectors fabricated at FBK-irst (Trento, Italy) and oriented to the ATLAS upgrade. The considered fabrication technology is simpler than that required for full 3D detectors with active edge, but the detector efficiency and radiation hardness critically depend on the columnar electrode overlap and should be carefully evaluated. The first assemblies of these sensors (featuring 2, 3, or 4 columns per pixel) with the ATLAS FEI3 read-out chip have been tested in laboratory.     Circulating Skeletal Troponin During Weaning From Mechanical Ventilation and Their Association to Diaphragmatic Function: A Pilot Study

    Background: Patients with acute respiratory failure (ARF) may need mechanical ventilation (MV), which can lead to diaphragmatic dysfunction and muscle wasting, thus making difficult the weaning from the ventilator. Currently, there are no biomarkers specific for respiratory muscle and their function can only be assessed trough ultrasound or other invasive methods. Previously, the fast and slow isoform of the skeletal troponin I (fsTnI and ssTnI, respectively) have shown to be specific markers of muscle damage in healthy volunteers. We aimed therefore at describing the trend of skeletal troponin in mixed population of ICU patients undergoing weaning from mechanical ventilation and compared the value of fsTnI and ssTnI with diaphragmatic ultrasound derived parameters.Methods: In this prospective observational study we enrolled consecutive patients recovering from acute hypoxemic respiratory failure (AHRF) within 24 h from the start of weaning. Every day an arterial blood sample was collected to measure fsTnI, ssTnI, and global markers of muscle damage, such as ALT, AST, and CPK. Moreover, thickening fraction (TF) and diaphragmatic displacement (DE) were assessed by diaphragmatic ultrasound. The trend of fsTnI and ssTnI was evaluated during the first 3 days of weaning.Results: We enrolled 62 consecutive patients in the study, with a mean age of 67 ± 13 years and 43 of them (69%) were male. We did not find significant variations in the ssTnI trend (p = 0.623), but fsTnI significantly decreased over time by 30% from Day 1 to Day 2 and by 20% from Day 2 to Day 3 (p < 0.05). There was a significant interaction effect between baseline ssTnI and DE [F(2) = 4.396, p = 0.015], with high basal levels of ssTnI being associated to a higher decrease in DE. On the contrary, the high basal levels of fsTnI at day 1 were characterized by significant higher DE at each time point.Conclusions: Skeletal muscle proteins have a distinctive pattern of variation during weaning from mechanical ventilation. At day 1, a high basal value of ssTnI were associated to a higher decrease over time of diaphragmatic function while high values of fsTnI were associated to a higher displacement at each time point
