Activity of selected essential oils on spoiling fungi cultured from Marzolino cheese

Microscopic fungi can be present on a variety of foodstuff, including cheese. They can be responsible for fungal spoilage, causing sensory changes making food unacceptable for human consumption, and posing severe health concerns. Furthermore, some of these organisms are able to resist antimicrobial preservatives provided for by law. Antifungal activity of 15 chemically defined EOs, alone and in mixture, were checked by a microdilution test against isolates of Penicillium funiculosum and Mucor racemosus cultured from rinds of Marzolino, a typical Italian fresh pecorino cheese. Origanum vulgare yielded the lowest MIC values, followed by Salvia sclarea, Ocimum basilicum and Cymbopogon citratus, while Citrus paradisi and Citrus limon were not active. All mixtures showed antifungal activity at lower concentration with respect to MIC values of each EO component, when not in combination. This study is the first to describe the setting up of EOs mixtures to limit spoiling moulds

The fingerprint of the summer 2018 drought in Europe on ground-based atmospheric CO2 measurements

During the summer of 2018, a widespread drought developed over Northern and Central Europe. The increase in temperature and the reduction of soil moisture have influenced carbon dioxide (CO2) exchange between the atmosphere and terrestrial ecosystems in various ways, such as a reduction of photosynthesis, changes in ecosystem respiration, or allowing more frequent fires. In this study, we characterize the resulting perturbation of the atmospheric CO2 seasonal cycles. 2018 has a good coverage of European regions affected by drought, allowing the investigation of how ecosystem flux anomalies impacted spatial CO2 gradients between stations. This density of stations is unprecedented compared to previous drought events in 2003 and 2015, particularly thanks to the deployment of the Integrated Carbon Observation System (ICOS) network of atmospheric greenhouse gas monitoring stations in recent years. Seasonal CO2 cycles from 48 European stations were available for 2017 and 2018.The UK sites were funded by the UK Department of Business, Energy and Industrial Strategy (formerly the Department of Energy and Climate Change) through contracts TRN1028/06/2015 and TRN1537/06/2018. All'origine della rappresentazione agiografica: le storie di san Nicola da Bisanzio all'Italia (XI-XIII secolo)

La tesi indaga le rappresentazioni narrative della vita e dei miracoli di san Nicola di Myra (poi di Bari) nell'arte del Mediterraneo dall'XI al XIII secolo. Il punto di partenza dello studio è stata l'integrazione del censimento di Nancy Patterson Sevcenko dei monumenti bizantini con le storie di san Nicola (1983). Nel Mediterraneo Orientale alcuni casi di studio emersi successivamente meritavano di essere integrati, in particolare il ciclo pittorico conservato nella basilica del santo a Myra, emerso a seguito dei restauri tra il 1990 e il 2004. Parallelamente mancava del tutto un'indagine comparativa delle rappresentazioni narrative della vita del santo sparse su tutto il territorio italiano nella pittura murale e su tavola, nella scultura e nella scultura in funzione architettonica. DEVELOPING SOLUTIONS FOR ACTIVE SPACE DEBRIS REMOVAL

openThis thesis gives an overview on the current issue of space debris and its implications, drawing attention to the proposed active debris removal techniques under investigation. Three developing solutions have been chosen to be examined and compared, aiming to deepening the various aspects of each: the gecko-based ADR technique, concerning the study of bio-inspired micropatterned dry adhesives and exploiting the particular structure of gecko’s foot, the electrodynamic tether mechanism, which employs the interaction between the geomagnetic field and the current flowing in tethers to produce electrodynamic drag, and finally the ClearSpace-1 mission, which avails itself of robotic arms to capture space debris.This thesis gives an overview on the current issue of space debris and its implications, drawing attention to the proposed active debris removal techniques under investigation. Il monastero di Santa Maria e San Gregorio: documenti e testimonianze artistiche dalle origini alla fine del Medioevo

Il volume intende ripercorrere la storia della chiesa di Santa Maria in Campo Marzio e di quella porzione immediatamente adiacente dell'omonimo monastero alla quale era annessa, oggi sede della Procura presso la Santa Sede del Patriarcato di Antiochia dei Siri. L'occasione dell'iniziativa editoriale è il centenario dell'istituzione della procura, avvenuta nel 1920. A questa data il complesso monastico, le cui origini risalivano all'VIII secolo con una prima comunità di monache orientali poi passate alla regola benedettina, era stato già da tempo smembrato. La parte più antica, venne destinata ad altri usi; mentre le monache continuarono per alcuni anni a vivere negli edifici gravitanti intorno alla chiesa cosiddetta esterna, intitolata a Santa Maria della Concezione, prima che questi fossero concessi al Patriarcato di Antiochia dei Siri. La pubblicazione ripercorrerà la storia di questa seconda porzione del complesso in connessione con quella della comunità monastica

John Orphanotrophos and Saint Nicholas: a special relationship? Some observations in light of figural evidence

Despite the celebrity of John Orphanotrophos and his crucial political role during the reign of the empress Zoe, his devotion toward Saint Nicholas has received limited attention. The special relationship between John Orphanotrophos and the saint can be followed both through written sources and figural evidences. According to Skylitzes, in 1034, saint Nicholas healed John Orphanotrophos from a rare disease. The contemporary miracle offers an interesting area of investigation and a vantage point on Saint Nicholas’ cult during the eleventh century. A further lens through which we can interpret this event is the illustration which follows Skylitzes’ account in the famed manuscript in Madrid (Madrid, Biblioteca National de España, Vitr. 26-2, fol. 209r). Additionally, a group of seals linked to Orphanotrophos’ personality and their iconography will be further discussed in relation to the evidence given by historical source

Indagine sulla gestione del rischio allergeni in esercizi di somministrazione di alimenti

Le allergie e le intolleranze alimentari sono reazioni avverse agli alimenti che coinvolgono una quota ridotta della popolazione (6-12%), con sintomatologia di gravità variabile, non infrequentemente con esito fatale. Negli ultimi anni, anche grazie a nuove norme che disciplinano la comunicazione al consumatore su questo tema, abbiamo assistito ad un incremento della consapevolezza da parte dei cittadini e ad una più diffusa offerta di prodotti alimentari privi di allergeni. Tuttavia, l’alto numero di non conformità per allergeni non dichiarati, così come la casistica di incidenti occorsi a persone sensibili, testimoniano come sia ancora problematico praticare una dieta di esclusione. Fra i settori che risultano più esposti alle problematicità figura quello della somministrazione degli alimenti. Lo studio analizza la frequenza, le modalità e l’efficacia con cui gli operatori offrono pasti per persone ipersensibili, applicando come strumento di verifica un monitoraggio analitico sulla presenza nei piatti pronti degli allergeni di cui si chiede più frequentemente l’esclusione (glutine, latte, uova). I risultati attestano come a fronte di una richiesta relativamente elevata di alimenti privi di allergeni, le condizioni di promiscuità presenti negli esercizi espongano sempre ad un livello di rischio, la cui minimizzazione richiede oltre che una puntuale e completa comunicazione fra operatore e avventore, anche di una ottimale gestione di competenze, ambienti ed attrezzature dedicate

La gestione della sicurezza alimentare nella filiera del polline

The high commercial expectations of pollen presuppose the effective management of food safety. The work describes the commercial value of the product, the legal framework, the food safety objectives, the legal standards and the prevention measures applied to the pollen production chain. Pollen is a primary product of apiculture, whose whole natural origin is exposed to contamination by agents from both harvesting and post‑harvesting environments, as well as the spoilage of their chemical components. Spoilage and contaminations of foreign materials, including any unwanted GMO pollen, are likely to affect food suitability. The microbiological risk is mainly represented by microorganisms resistant to the extreme values of aw. Potential hazards of abiotic nature are represented by foreign bodies, radionuclides, mycotoxins, pesticides, heavy metals, PCBs and dioxins, veterinary drugs, phytotoxins, agents responsible for allergies and food intolerances. Prevention measures focus on the effective management of production phases, with particular reference to honeybees positioning, cleanliness from foreign materials, freezing treatment to kill eggs, larvae and adults of insects, proper dehydration and appropriate storage
