Evaluation of lycopene intake in daily food rations of women from the Lover Silesia region
Celem pracy była ocena podaży likopenu w całodziennych racjach pokarmowych kobiet (n=725) z terenu Dolnego
Śląska. W badaniach do tego celu wykorzystano 24-godzinny wywiad żywieniowy. Badaną grupę kobiet podzielono według
wskaźnika masy ciała (BMI). Średnia zawartość likopenu w całodziennych racjach pokarmowych 725 badanych kobiet
wynosiła 7,5 mg. Stwierdzono, że najwyższą podażą likopenu charakteryzowała się średnia całodzienna średnia racja pokarmowa
kobiet z otyłością (BMI >30). Wykazano niską wiedzę badanych kobiet na temat roli likopenu w diecie. Wskazane
jest podjęcie odpowiednich działań edukacyjnych w tym zakresie.The aim of this study was to assess lycopene intake in daily food rations of women (n=725) from the Lower Silesia
region. The data on the lycopene intake were collected using 24–hour recall and diet history questionnaire. The intake of
lycopene was not too low. The average lycopene contents in the daily food rations of 725 women from Lower Silesia region
was 7.5 mg. The highest lycopene intake was found in the food daily rations of women with BMI >30. In examined group
of women low knowledge on the importance of the role of lycopene in health was noticed. Educational interventions are
required to inform women and to increase lycopene intake among them
Assessing the eating habits of perimenopausal women from the point of view of hazards by the diseases of civilization - the intake of some selected nutrients
Celem pracy była ocena sposobu żywienia kobiet (n = 100) w okresie okołomenopauzalnym w aspekcie zagrożenia chorobami cywilizacyjnymi Zastosowano metodę trzykrotnego wywiadu o spożyciu z ostatnich 24 godzin oraz historię żywienia (m.in. zwyczajowa dzienna liczba posiłków, częstotliwość spożywania produktów). Sposób żywienia większości badanych kobiet był nieprawidłowy, aterogenny, zbliżony do sposobu żywienia innych populacji w krajach rozwiniętych gospodarczo. Na podstawie analizy ilościowej wykazano, że w około 30-50% diet podaż składników aterogennych (nasycone kwasy tłuszczowe, tłuszcz ogółem, cholesterol, białko zwierzęce) przekraczała zalecenia przyjętego modelu prozdrowotnego (powyżej 110%). Sposób żywienia badanych kobiet nie różnił się zasadniczo w zależności od poziomu ich wykształcenia. W średniej racji pokarmowej udział energii pochodzącej z tłuszczu, białka i węglowodanów wynosił odpowiednio 29,4; 14,4 i 56,1%.The objective of the study was to assess the eating habits of perimenopausal women (n = 100) from the point of view of hazards by the diseases of civilization. A method of threefold interview referring to the food eaten during the most recent 24–hour period and a diet history were applied (whereas the latter covered, among other things, a usual number of meals per day, a frequency of eating food products). The eating habits of the majority of women interviewed were improper, atherogenic, and close to the eating habits of other populations living in the economically developed countries. On the basis of the quantitative analysis, it was proved that the levels of components supplied with the food eaten exceeded the recommended amounts as assumed by the pro-health diet model in ca. 30-50% of the food rations consumed by the women interviewed (over 110%). The eating habits of the women investigated did not basically differ with regard to their levels of education. The energy ratios provided with one average food ration and originating from fat, protein and carbohydrates were 29.4%, 14.4%, and 56.1%
Folic acid and cobalamine intake in daily food rations of women from the region of Lower Silesia
Oceniono podaż kobalaminy i kwasu foliowego w całodziennych racjach pokarmowych kobiet (n=960) z terenu Dolnego Śląska. Do tego celu wykorzystano 24-godzinny wywiad żywieniowy. W średniej całodziennej racji pokarmowej wykazano niewystarczające spożycie kwasu foliowego (221,5 mcg), które realizowało 79% zaleceń. W średniej całodziennej racji pokarmowej wykazano niewystarczające spożycie cyjanokobalaminy (2,9 mcg), które realizowało 97% zaleceń. W badanej grupie kobiet wykazano niski poziom wiedzy o znaczeniu tych witamin dla zdrowia oraz potrzebę wzmożonej edukacj i prozdrowotnej.The aim of paper was to assess the folic acid and cobalamine women (n=960). The information about vitamins intake were collected using 24-hour recall and diet history questionnaire. The intake of vitamins folic acid and cobalamine was too low. The mean folic acid content in the diets of 100 women from Lower Silesia was 221.5 mcg and complied in 79% recommended level. The mean cobalamine content in the diets of 100 women from Lower Silesia was 2.9 mcg and complied in 97% recommended level.In examined group low knowledge about importance role of folic acid and cobalamine in health was noticed. Educational interventions are required to inform women and to increase its intake among them
Effect of eating habits, BMI value, physical activity and smoking cigarettes on blood lipid indices of adolescent boys from Poland
Background. The lifestyle of young boys has impact on the risks of cardiovascular diseases.
Objective. The aim of the study was to evaluate the effect of atherosclerosis risk factors determined by overweight and
obesity and lifestyle, i.e.: eating habits, low physical activity and smoking cigarettes, on blood lipid profile of boys at the
age of 16 to 18.
Material and Methods. The study covered 369 boys from secondary schools. They were evaluated for the supply of
dietary constituents with atherogenic and protective actions, for nutritional status acc. to Cole’s criteria, the level of
physical activity, and smoking cigarettes. Lipid metabolism was determined based on criteria recommended by the
American National Cholesterol Education Program (NCEP). Logistic regression analysis was conducted and risk odds
ratio [OR] was determined.
Results. Analyses showed the boys to be characterized by overweight (10.8%) and obesity (2.7%), and by inappropriate
concentration of total cholesterol (26.5%), LDL (13.3%), HDL (21.7%) and triglycerides (41.7%). High BMI turned out
to be a significant risk factor of an elevated total cholesterol concentration: [aOR]=2.27; triglycerides: [aOR]=2.35 and
LDL: [aOR]=2.41. Low physical activity was found to negatively affect the concentration of LDL: [aOR]=1.88. The boys
smoking cigarettes were shown to have a reduced HDL: [aOR]=1.65. The total content of fat and saturated fatty acids in
diet exerted a significantly negative impact on blood lipid profile of the boys.
Conclusions. The lifestyle of the young boys was demonstrated to determine the risk of cardiovascular diseases.
Overweight and obesity, abdominal obesity in particular, were found to be a significant risk factor of disorders in their
lipid metabolism
Impact of products from ground buckwheat added to balanced diets on biochemical blood markers in Wistar rats
Background. It is believed that buckwheat can be used as a functional food ingredient in the prevention and treatment of
diet-related diseases, e.g., atherosclerosis, hypertension, obesity, constipation and cancers. The use of buckwheat protein
preparations in the diet for experimental animals had a significant effect on the reduction of cholesterol level in their blood
serum, liver and gall bladder, and additionally inhibited the formation of gall stones as a result of changes in cholesterol
metabolism. Buckwheat protein extracts have additionally been shown to reduce the level of LDL and VLDL fractions.
Objective. The aim of this study was to evaluate the effects of different products from ground buckwheat nuts (flour, meal
and bran) and bread with their addition applied in balanced diets on selected biochemical blood markers in Wistar rats.
Material and Methods. The study was conducted with 64 male Wistar rats. Animals received a semi-synthetic diet AIN
93M with 20% addition of buckwheat flour, meal or bran and containing 20% rye-buckwheat bread made with 35% buckwheat
flour, meal or bran, respectively. The animals were fed the experimental diets for 4 weeks. Whole blood was used to
measure hematocrit and hemoglobin concentrations. The contents of glucose, total cholesterol, LDL, HDL, and triglycerides
were determined in the blood serum using BioSystem biochemical tests.
Results. There was no significant effect of 20% addition of ground buckwheat products (buckwheat flour, meal and bran)
or bread with their addition to balanced diets on hematocrit, hemoglobin concentration in the blood or the concentration of
glucose in the blood serum of experimental animals. The study showed a statistically significant beneficial effect of dietary
addition of buckwheat or rye-buckwheat bread on the reduction of total cholesterol, LDL cholesterol, and triglycerides
(TGC) in the blood serum of rats.
Conclusions. A statistically significant decrease was demonstrated in LDL cholesterol and triglycerides in the blood serum
of animals fed diets with 20% addition of ground buckwheat products (buckwheat flour, meal and bran) and rye-buckwheat
bread containing these products.Wprowadzenie. Uważa się, że gryka może znaleźć zastosowanie, jako składnik żywności funkcjonalnej w prewencji i leczeniu
chorób dietozależnych, m.in. miażdżycy, nadciśnienia, otyłości, zaparć, a także chorób nowotworowych. Zastosowanie preparatów
z gryki w diecie zwierząt doświadczalnych w znaczący sposób wpływa na obniżenie stężenia cholesterolu w surowicy
krwi, wątrobie oraz woreczku żółciowym, a ponadto hamuje powstawanie kamieni żółciowych na skutek zmiany metabolizmu
cholesterolu. Wykazano, że produkty z gryki obniżają poziom frakcji cholesterolu LDL i VLDL.
Cel. Celem niniejszych badań była ocena wpływu rożnych produktów przemiału orzeszków gryki (mąki, śruty i otrąb) oraz
pieczywa z ich udziałem, dodawanych do diet zbilansowanych, na wybrane wskaźniki biochemiczne krwi (hematokryt,
stężenie hemoglobiny we krwi oraz stężenie glukozy, cholesterolu całkowitego, cholesterolu HDL i LDL oraz triglicerydów
w surowicy krwi) u szczurów rasy Wistar.
Materiał i metody. Badania prowadzono z udziałem 64 samców szczurów rasy Wistar. Zwierzęta otrzymywały diety AIN
93M zmodyfikowane z 20% dodatkiem odpowiednio - mąki, śruty lub otrąb gryczanych oraz z 20% dodatkiem pieczywa
żytnio-gryczanego odpowiednio z 35% udziałem mąki, śruty lub otrąb gryczanych. Zwierzęta karmiono dietami doświadczalnymi przez 4 tygodnie. W krwi pełnej oznaczano: wskaźnik hematokrytu i stężenie hemoglobiny. Zawartość glukozy,
cholesterolu całkowitego, cholesterolu LDL, HDL i triglicerydów oznaczano w surowicy krwi.
Wyniki. Nie wykazano istotnego wpływu 20% dodatku produktów przemiału orzeszków gryki (mąki, śruty i otrąb gryczanych)
oraz pieczywa z ich udziałem do diet zbilansowanych na wartości hematokrytu, stężenie hemoglobiny we krwi oraz
stężenie glukozy w surowicy krwi badanych zwierząt doświadczalnych. Wykazano statystycznie istotny korzystny wpływ
dodatku gryki lub pieczywa żytnio – gryczanego na obniżenie zawartości cholesterolu całkowitego, cholesterolu LDL oraz
triglicerydów (TGC) w surowicy krwi.
Wnioski. Stwierdzono statystycznie istotne obniżenie stężenia cholesterolu LDL oraz triglicerydów w surowicy krwi zwierząt,
karmionych dietami z 20% dodatkiem produktów przemiału orzeszków gryki (mąki, śruty i otrąb gryczanych) oraz
pieczywa żytnio - gryczanego z ich udziałem
Comparison of vegetables and fruit consumption frequency by athletes before and after marathon
Background. One of the prerequisites to achieve high sports scores is to ensure the proper supply of nutrients. Both
deficiency and excess of these components can cause malfunctions of bodies in athletes, which adversely affects their
health and performance.
Objective. Comparison of the frequency of intake of groups of vegetables and fruits, being sources of vitamins and
minerals, by marathon runners in periods before and after the long-distance run.
Material and Method. The frequency of fruit and vegetable consumption by marathoners was analyzed among women (n
= 105) and men (n = 87) aged between 19 and 73 years, before and after running competition. The Block’s questionnaire
was used to evaluate the consumption of groups of vegetables and fruits (leafy, root and cruciferous vegetables, as well as
stone, berry and tropical fruits). Their consumption was assessed on a point scale.
Results. Sufficient vegetable and fruit intake was found in about 55% of the marathon runners. Diets of about 20% of the
respondents were poor in fruits and vegetables. Higher fruit and vegetable intake was reported in both men and women after
the marathon compared to the pre-run period.
Conclusion. Daily food rations of about 1/4 of the surveyed marathoners provided insufficient amounts of fruits and
vegetables, and daily food rations of about 20% of the athletes were poor in these products. After the marathon, the
consumption of vegetables and fruits improved in 15% of the surveyed women and in 10% of the men compared to the
pre-marathon period.Wprowadzenie. Jednym z warunków osiągania wysokich wyników sportowych jest zapewnienie odpowiedniej podaży
składników odżywczych. Zarówno niedobry, jak i nadmiary tych składników pokarmowych mogą powodować zaburzenia
funkcjonowania organizmu sportowca, co niekorzystnie wpływa na zdrowie i osiągane wyniki sportowe.
Cel. Porównanie częstotliwości spożycia warzyw i owoców, stanowiących źródło witamin i składników mineralnych,
przez maratończyków w okresach przed i po biegu długodystansowym.
Materiały i metody. Analizowano częstotliwość spożycia warzyw i owoców przez maratończyków: kobiety (n=105)
i mężczyzn (n=87) w wieku od 19 do 73 lat w okresach przed i po biegu. Użyto kwestionariusza Block’a do oceny
spożycia grup warzyw i owoców (warzyw liściastych, korzeniowych, krzyżowych, owoców pestkowych, jagodowych
i tropikalnych). Oceniono spożycie tych produktów w skali punktowej.
Wyniki. Wystarczające spożycie warzyw i owoców stwierdzono u około 55% badanych maratończyków. Diety około 20%
badanych osób były ubogie w warzywa i owoce. Wyższe spożycie warzyw i owoców wykazano zarówno u kobiet, jak
i u mężczyzn w okresie po maratonie w porównaniu do okresu przed biegiem.
Wnioski. W około 1/4 badanej grupy maratończyków stwierdzono niewystarczające spożycie warzyw i owoców
w całodziennej racji pokarmowej, a całodzienne racje pokarmowe około 20% sportowców były ubogie w te produkty. Po
maratonie stwierdzono poprawę spożycia warzyw i owoców u 15% badanych kobiet i 10% mężczyzn w porównaniu do
okresu przed biegiem długodystansowym
Assessment of the frequency of intake of selected sources of dietary fibre among persons competing in marathons
Background. The knowledge about nutrition of the marathoners is insufficient. An insightful and personalized approach
to the diet of long-distance athletes, including the consumption of important nutrients such as dietary fiber, is needed to
improve the efficiency of their performance.
Objective. Estimation of the frequency of consumption of food products as a source of dietary fiber by people preparing
for the marathon.
Material and Methods. The frequency of intake of selected dietary fiber sources by women (n=105) and men (n=87) aged
19 to 73 years, who compete in marathons. The Block questionnaire was used to assess the intake of fiber sources (whole
grain cereals, vegetables, fruits, potatoes and legumes). Fiber consumption was expressed on a dot scale.
Results. Adequate dietary fiber intake was found in 44% of the marathon runners, but insufficient one - in 50% of the
respondents. Diets of about 6% of the subjects were poor in dietary fiber. Lower dietary fiber intake was demonstrated in
both men and women in the pre-marathon period, and was due to the recommended dietary fiber intake during this period.
Conclusion. The study showed an insufficient intake of dietary fiber in all-day rations of most of the surveyed marathon
runners. A statistically significantly lower dietary intake of marathoners (both women and men) was demonstrated before
the marathon compared to the post-long distance period.Wprowadzenie. Wiedza na temat żywienia maratończyków jest ciągle niewystarczająca. Konieczne wydaje się wnikliwe
i bardziej zindywidualizowane podejście do sposobu żywienia osób uprawiających biegi długodystansowe, w tym
spożywania ważnych składników pokarmowych np. błonnika pokarmowego dla poprawy optymalizacji ich wydolności.
Cel. Ocena częstotliwości spożycia produktów stanowiących źródło błonnika pokarmowego przez osoby przygotowujące
się do maratonu.
Materiał i metody. Analizowano częstotliwość spożycia wybranych źródeł błonnika pokarmowego przez kobiety (n=105)
i mężczyzn (n=87) w wieku od 19 do 73 lat, którzy biorą udział w maratonach. Użyto kwestionariusza Block’a do oceny
spożycia źródeł błonnika (produktów zbożowych z pełnego przemiału, warzyw, owoców, ziemniaków i nasion roślin
strączkowych). Spożycie błonnika wyrażono w skali punktowej.
Wyniki. Wystarczające spożycie błonnika stwierdzono u 44% badanych maratończyków, natomiast niewystarczające
u 50% respondentów. Diety około 6% badanych osób były ubogie w błonnik pokarmowy. Niższe spożycie błonnika
pokarmowego wykazano zarówno u kobiet, jak i u mężczyzn w okresie przed maratonem i wynikało z zalecanego w tym
okresie ograniczenia błonnika na rzecz węglowodanów przyswajalnych.
Wnioski. U większości badanych maratończyków stwierdzono niewystarczające spożycie błonnika pokarmowego
w całodziennej racji pokarmowej. Wykazano statystycznie istotnie niższe spożycie błonnika pokarmowego u maratończyków
(zarówno kobiet, jak i mężczyzn) przed maratonem w porównaniu do okresu po biegu długodystansowym
