    ABSTRACT The aim of the research was to investigate the effect of spraying hot water, acetic acid and lactid acid on the growth of bacteria in goat carcasses. Twenty five goat carcasses from abattoir were divided into five groups. The first group was left unsprayed or control, the second group was sprayed with 1.8% (v/v) acetic acid, the third group was sprayed with 1.5% (v/v) lactid acid, the fourth group was presprayed with hot water 80° C and then sprayed with 1.5% (v/v) lactid acid, and the fifth group was presprayed with 1.8% (v/v) acetic acid and then sprayed with 1.5% (v/v) lactid acid. Measuarement of pH value, total plate count and total coliform were performed before spraying and after 12 hours of aging at room temperature. Analysis of variance was used to compare the effectiveness of different treatments, followed by pairwise comparison of treatment means (Scheffe test). The result showed that the lowest decreasing of pH value was found in control group and the highest decreasing was found in the fifth group.
