Aplicació d’alta pressió sobre dissolucions aquoses de goma diutan: influència sobre les propietats reològiques
En este trabajo se estudia el efecto de aplicar alta
presión sobre el comportamiento reológico de disoluciones
acuosas de goma diutan con el objeto de ampliar
su uso potencial. Muestras de goma diutan sin
tratar y tratadas fueron comparadas usando ensayos
de cizalla estacionaria y ensayos de cizalla oscilatoria
de baja amplitud. Esto se ha hecho haciendo pasar
una vez disoluciones acuosas de 0.5% en peso de
goma diutan en 0 y 1% en peso de NaCl a través de
un Microfluidizador M110P a 5000 psi (34,47 MPa).
Inicialmente las disoluciones de goma diutan presentaron un comportamiento tipo gel débil con valores
del módulo elástico por encima de los del módulo
viscoso. Adicionalmente presentaron un comportamiento
pseudoplástico, claramente no newtoniano,
que se ajusta perfectamente al modelo de Carreau.
Después de aplicar alta presión, las muestras ilustraron
un cambio de comportamiento reológico. Se produce
una fuerte destrucción estructural evidenciada
por una disminución de viscosidad y la aparición de
un comportamiento tipo líquido con valores de G”
por encima de los de G’.In this work, the effect of applying high pressure on
the rheological properties of diutan gum aqueous solutions
in order to extend its potential use was studied.
Untreated and treated diutan gum samples have been
compared using steady and small amplitude oscillatory
shear. This has been done passing once 0.5wt%
diutan gum solutions in 0 and 1wt% NaCl through
a Microfluidizer M110P at 5000 psi (34.47 Mpa). At
first, the diutan gum solutions exhibited a gel-like behaviour
with elastic modulus values above the viscous
modulus values. Additionally, they showed a pseudoplastic
behaviour, clearly no-Newtonian which succesfully
fitted the Carreau model. After applying high
pressure, the samples illustrated a modification of the
rheological behaviour. An important structural destruction
occurred. This was evidenced by a decrease
of viscosity and the appearance of a liquid-like behaviour
with G” above G’ values.En aquest treball s’estudia l’efecte d’aplicar alta
pressió sobre el comportament reològic de dissolucions
aquoses de goma diutan amb l’ objectiu d’ampliar
el seu potencial d’us. Mostres de goma diutan
sense tractar i d’altres tractades van ser comparades
emprant assajos de cisalla estacionaria i assajos de cisalla
oscil·latòria de baixa amplitud. Això s’ha obtingut,
fent passar un cop dissolucions aquoses de 0.5%

A Comparison of the Effect of Temperature on the Rheological Properties of Diutan and Rhamsan Gum Aqueous Solutions
The rheological properties exhibited by gums make its use in applications interesting,
such as foods, cosmetics, enhanced oil recovery, or constructions materials. Regardless of application
field, the effect of temperature on these properties is of great importance, since these properties can
be modified and cause the gum not to be useful for those conditions. Diutan and rhamsan gums are
biopolymers, belonging to the sphingans, with similar structures which differ in the substituents of
their side chains. It is known that both gums exhibit suitable viscoelastic properties and flow behavior
when used as a stabilizer, gelling agent, or thickener. Both gums are widely used in food industry,
personal care products, construction materials, oil operations, etc. For this reason, to know the effect
of the temperature on their rheological properties is very helpful. For this purpose, small amplitude
oscillatory shear measurements and flow curves, as a function of the temperature from 10 C to
60 C, have been performed, and the results obtained for both gums compared. The obtained results
provide interesting information from an industrial point of view, since they reveal that the rheological
properties remained almost unaltered in the temperature range assessed with diutan gum aqueous

Influence of glycerol addition on the droplet size distribution, mean diameters and physical stability of ecological O/W emulsions processed with Microfluidizer technology
The aim of this work was to investigate the influence
of the pressure ( 0 psi and 15000 psi) and the number of passes (0,1,2 and 3) through a high pressure
homogenizer with Microfluidizer technology on the
droplet size distribution, mean diameters and physical stability of ecological O/W emulsions. The results
with an emulsion formulated with 50 wt% of glycerol
in the continuous phase are compared. As dispersed
phase a 30 wt% mixture of green solvents, N,N-dimethyldecanamide and α-pinene with a 75/25 mass
ratio was used. In addition, an ecological surfactant
derived from coconut oil, HLB = 13.El objetivo de este trabajo ha consistido en investigar
cómo influye la presión (0 y 15000 psi) y el número
de pasadas (1, 2 y 3) a través de un homogeneizador
de alta presión con tecnología Microfluidizer sobre la
distribución de tamaños de gota, diámetros medios y
estabilidad física de una emulsión ecológica O/W. Se
comparan los resultados con la emulsión formulada
con un 50% en peso de glicerol en el medio continuo.
Como fase dispersa se utiliza un 30% en peso de una
mezcla de disolventes verdes, N,N-dimetildecanamida y α-pineno, en una relación en masa de 75/25.
Adicionalmente se emplea un tensioactivo ecológico

Avances en la formulación de emulsiones
This review emphasizes that formulation, along with processing, defines the microstructure of emulsions and therefore their functional properties. Possible components of both the oil and aqueous phases are described as well as their relevant properties concerning emulsions. The general characteristics of low molecular and high molecular weight emulsifiers, which essentially are adsorbed on the oil/water interfaces, are described. Synthetic emulsifiers derived from the oil industry, as well as those stemming from edible raw materials and biotechnological sources are considered. The main steps of the emulsifying mechanism using proteins and the role of synthetic polymers as well as polysaccharides as stabilizers are discussed. In addition, the formation of protein-polysaccharide complexes as a way of optimizing emulsion formulations is analyzed. Finally, this review points out that the progress in emulsion formulation must rely on the product engineering approach, which involves a multidisciplinary methodology.Esta revisión destaca que la formulación, junto con el procesado, definen la microestructura de las emulsiones, y por tanto sus propiedades funcionales. Se describen los componentes de las fases oleosa y acuosa, así como sus principales propiedades en relación con las emulsiones. Se estudian los emulsionantes, que ocupan básicamente la interfase aceite-agua, distinguiendo entre los de bajo y alto peso molecular, así como entre sintéticos derivados del petróleo, otros que se pueden obtener a partir de materias primas comestibles y de origen biotecnológico. Se resumen las etapas claves que sufren las proteínas como emulsionantes y las condiciones en que polímeros sintéticos y polisacáridos actúan cono estabilizantes. Se aborda también la formación de complejos proteína-polisacáridos como una vía de optimización de formulaciones. Se finaliza destacando que los progresos en formulación de emulsiones deben basarse en la ingeniería del producto y en metodologías multidisciplinares
Elaboration and characterization of nanoemulsion with orange essential oil and pectin
BACKGROUND: Nanoemulsions formulated with citric essential oils are currently of interest because of their physical and chemical properties and multiple applications in areas such as the food industry or agrochemicals. These are thermodynamically unstable and have almost Newtonian flow behaviour, but a suitable formulation allows systems to be obtained with good physical stability and rheological properties. The addition of pectin makes this possible. In this work, food nanoemulsions formulated with pectin, orange essential oil (5 wt%), and Tween 80 were obtained by microfluidization. First, the effect of Tween 80 concentration from 1 to 5 wt% on emulsions without pectin was evaluated. Then, pectin was added to the most stable nanoemulsion obtained and two variables were studied: the pectin solution concentration (from 2 to 6 wt%) and the pectin/emulsion ratio (1:1 or 2:1) at a fixed pectin concentration. RESULTS: Rheological, laser diffraction, and multiple light scattering techniques were employed to determine the content of Tween 80 that results in the most stable nanoemulsion without pectin, which was 3 wt%. In addition, these techniques were used to determine the structure and physical stability of the nanoemulsions containing orange essential oil and pectin. The results obtained showed that the emulsions containing 2 wt% pectin were destabilized before 24 h. Furthermore, the emulsion with 6 wt% pectin and a 2:1 pectin/emulsion ratio showed the highest viscosity and the lowest mean diameters, and therefore the greatest stability. CONCLUSION: This work extends the knowledge of formulation of nanoemulsions and using essential oils. © 2021 The Authors. Estudio de la aplicación del sistema de evaluación por pares a una asignatura de experimentación
En este trabajo se evalúa la eficacia del sistema de evaluación por pares en una asignatura
de experimentación de tercer año universitario. El estudio se prolonga a lo largo de dos cursos
académicos consecutivos, utilizando los mismos tres pares de correctores. Los resultados obtenidos
se comparan con los que se habrían alcanzado de haber utilizado tres correctores. Se
presentan diversas estrategias de análisis estadístico de las distintas calificaciones propuestas.
La distribución de calificaciones por debajo o por encima de la línea recta de pendiente uno, en
la representación lineal de las calificaciones de uno de los miembros de la pareja frente al otro,
aporta una herramienta cómoda para un primer análisis de la consistencia de las calificaciones
propuestas. La representación de las calificaciones normalizadas respecto a las medias permite
también una rápida evaluación de la eficacia de una triple corrección frente a la corrección por
paresThis article deals with the assessment of the efficiency of the pairwise exam marking system
applied to a laboratory subject offered in the third university year. This project was carried
out over two consecutive academic years with the help of the same three pairs of examiners.
The results obtained are compared with those of three examiners (triple marking). Several
strategies for the statistical analysis of marks proposed by examiners are considered. The distribution
of the marks given by each examiner against those of a second examiner provides a
useful tool to perform an initial analysis of results, insofar as they can scatter below or above
the straight line of slope 1. The plot of normalised marks versus average marks enables clear
conclusions to be drawn on the efficiency of triple versus pairwise markin
Rheological properties and physical stability of ecological emulsions stabilized by a surfactant derived from cocoa oil and high pressure homogenization
The goal of this work was to investigate the influence of the emulsification method on the rheological
properties, droplet size distribution and physical stability of O/W green emulsions formulated with
an eco-friendly surfactant derived from cocoa oil. The methodology used can be applied to other emulsions.
Polyoxyethylene glycerol esters are non-ionic surfactants obtained from a renewable source which fulfill the environmental
and toxicological requirements to be used as eco-friendly emulsifying agents. In the same way, N,NDimethyloctanamide
and α-Pinene (solvents used as oil phase) could be considered green solvents. Emulsions
with submicron mean diameters and slight shear thinning behavior were obtained regardless of the homogenizer,
pressure or number of passes used. All emulsions exhibited destabilization by creaming and a further coalescence
process which was applied to the coarse emulsion prepared with a rotor-stator homogenizer. The emulsion
obtained with high pressure at 15000 psi and 1-pass was the most stable.Propiedades reológicas y estabilidad física de emulsiones ecológicas estabilizadas por un tensioactivo
derivado del aceite de coco y homogeneización de alta presión. El objetivo de este trabajo fue estudiar la influencia
del método de emulsificación sobre las propiedades reológicas, la distribución de tamaños de gota y la estabilidad
física de emulsiones verdes O/W formuladas con un tensioactivo derivado del aceite de coco respetuoso con
el medioambiente. La metodología empleada puede ser aplicada a cualquier otro tipo de emulsiones. Los ésteres
polietoxilados de glicerina son tensioactivos no iónicos obtenidos de fuentes renovables que cumplen requisitos
medioambientales y toxicológicos para ser usados como agentes emulsionantes ecológicos. Del mismo modo,
la N,N-dimetil octanamida y el α-Pineno (disolventes usados como fase oleosa) pueden ser considerados como
disolventes verdes. Se han obtenido emulsiones con diámetros medio submicrónicos y comportamiento ligeramente
pseudoplástico independientemente del equipo, la presión o el número de pasadas empleados. Todas las
emulsiones presentaron desestabilización por cremado y un proceso posterior de coalescencia que fue completado

El objetivo de esta investigación fue comparar tres
tensoactivos ecológicos derivados del aceite de coco
para la preparación de emulsiones aceite-en-agua
concentradas formuladas con α-pineno. Los tensoactivos
utilizados son ésteres polietoxilados de glicerina
que presentan diferente número de grupos de óxido
de etileno, que son responsables principales del carácter
hidrófilo del tensoactivo. Las técnicas utilizadas
para caracterizar las emulsiones fueron la reología,
la difracción láser y el “multiple light scattering”. Se
ha demostrado que el uso del tensoactivo no-iónico
Levenol C-201 (17 grupos de óxido de etileno y valor
HLB de 13), produce emulsiones con mayor estabilidad
física debido a sus menores tamaños de gota y una
mayor viscosidad, lo que ayuda a prevenir fenómenos
de desestabilización como el cremado o la coalescencia.
Por tanto, este estudio proporciona importantes
resultados sobre las propiedades y estabilidad física
de emulsiones formuladas con ésteres etoxilados de
glicerina derivados del aceite de coco que pueden
ser utilizadas para el desarrollo de nuevos productos
bioaplicables.The goal of this work was to compare three different
ecological surfactants derived from coconut oil for
the preparation of concentrated oil-in-water emulsions
formulated with alpha-pinene. The surfactants
used were polyoxyethylene glycerol fatty acid esters
with different number of oxyethylene groups. These
are liable for the hydrophilic surfactant role. Rheology,
laser diffraction and Multiple Ligh Sacttering
were used in order to characterise the emulsions. It
has been demonstrated that the use of Levenol C-201
(HLB: 13) lead to prepare emulsions with longer physical
stability due to lower droplet size and higher viscosity.
These facts help to slow down destabilization
processes such as creaming or coalescence. Therefore,
this study provides interesting results about the properties
and physical stability of emulsions containing
polyoxyethylene glycerol fatty acid esters derived
from coconut oil, which can be used to develop new

Influence of nanoemulsion/gum ratio on droplet size distribution, rheology and physical stability of nanoemulgels containing inulin and omega-3 fatty acids
Background: New consumer habits are forcing the food industry to develop new and healthy products. In response to this tendency, in this investigation, we obtained nanoemulgels by microfluidization containing inulin fibre and omega-3 fatty acids. First, the influence of the number of microfluidization cycles on the physical properties of the nanoemulsions was studied. Subsequently, an advanced-performance xanthan gum was added to the nanoemulsion in different nanoemulsion/xanthan ratios (1:1, 2:1, 3:1, 4:1, 1:2, and 1:3). Results: Laser diffraction, multiple light scattering, and rheology techniques were used to characterize nanoemulsions and the corresponding nanoemulgels. The nanoemulsion with the lowest Sauter mean diameter (138 nm) and the longest physical stability was obtained after three passes through a microfluidization device at a fixed pressure of 103 421 kPa. Thus, these processing conditions were always used to obtain the nanoemulsion; these were subsequently mixed with a xanthan gum solution to produce nanoemulgels that showed weak gel-like viscoelastic and shear-thinning flow behaviours. A decrease in the nanoemulsion/xanthan ratio (i.e. by an increase in the content of xanthan gum in the nanoemulgel) increased the viscoelastic moduli and the zero shear viscosity values. A rise in the droplet size was observed with aging time, probably due to flocculation. The nanoemulsion/xanthan gum mass ratio of 1:3 yielded the most stable nanoemulgel. Conclusions: This work is a contribution to the development of functional foods. It has been demonstrated that it is possible to obtain a stable nanoemulgel-based food matrix containing fibre and omega-3 fatty acids. © 2022 The Authors.
