    Study of Influence of Calcium Content in Milk on Quality Indicators of Cottage Cheese

    The analysis was realized, and the dependence between the calcium content and organoleptic and functional-technological properties of milk as a raw material for producing sour milk cheese was determined. It was demonstrated, that alongside with other factors, the important role in milk clotting belongs to calcium, which role is in binding of free OH-groups of phosphoric acid of casein micelles. As a result of the aforesaid, their negative charge and colloid stability decrease with further hydrophilicity decrease with further aggregation of casein molecules. It was established, that the excessive content of calcium in milk is negative that is manifested in formation of the dry and brittle consistence of sour milk cheese. There was offered the way of calcium content regulation in milk by its decalcification using the natural sorbent of sodium alginate. Regulation of the milk salt system, especially, the calcium content as an initial raw material for producing sour milk cheese by the change of the content and condition of calcium allowed to correct parameters of the process of sour milk cheese making and its functional-technological properties, especially, moisture-keeping ability, form stability and other. It was established, that the decrease of the calcium content in milk provides getting sour milk cheese with the soft, easily smearing consistence, without whey separation. The obtained data on the characteristic of organoleptic indicators fully correlate with studies of the microstructure and dispersity of sour milk cheese. It was determined, that milk decalcification results in raising dispersity of sour milk cheese at the synchronous increase of the percent content of protein particles with minimal size characteristics in the system. It was elucidated, that the microstructure of studied samples consists of protein grains of the same form, evenly distributed by the whole volume. Based on the obtained experimental data, there were corrected parameters of the technological process of sour milk cheese production.     Potentials to differentiate milk composition by different feeding strategies

    To investigate the effect of the dietary intake of the cow on milk composition, bulk-tank milk was collected on 5 occasions from conventional (n = 15) and organic (n = 10) farms in Denmark and on 4 occasions from low-input nonorganic farms in the United Kingdom, along with management and production parameters. Production of milk based on feeding a high intake of cereals, pasture, and grass silage resulted in milk with a high concentration of α-linolenic acid (9.4 ± 0.2 mg/ kg of fatty acids), polyunsaturated fatty acids (3.66 ± 0.07 mg/kg of fatty acids), and natural stereoisomer of α-tocopherol (RRR-α-tocopherol, 18.6 ± 0.5 mg/kg of milk fat). A milk production system using a high proportion of maize silage, by-products, and commercial concentrate mix was associated with milk with high concentrations of linoleic acid (LA; 19.7 ± 0.4 g/kg of fatty acids), monounsaturated fatty acids (27.5 ± 0.3 mg/kg of fatty acids), and a high ratio between LA and α-linolenic acid (4.7 ± 0.2). Comparing these 2 production systems with a very extensive nonorganic milk production system relying on pasture as almost the sole feed (95 ± 4% dry matter intake), it was found that the concentrations of conjugated LA (cis-9,trans-11; 17.5 ± 0.7 g/kg of fatty acids), trans-11-vaccenic acid (37 ± 2 g/kg of fatty acids), and monounsaturated fatty acids (30.4 ± 0.6 g/kg of fatty acids) were higher in the extensively produced milk together with the concentration of antioxidants; total α-tocopherol (32.0 ± 0.8 mg/kg of milk fat), RRR-α-tocopherol (30.2 ± 0.8 mg/kg of milk fat), and β-carotene (9.3 ± 0.5 mg/kg of milk fat) compared with the organic and conventional milk. Moreover, the concentration of LA (9.2 ± 0.7 g/kg of fatty acids) in milk from the extensive milk production system was found to approach the recommended unity ratio between n-6 and n-3, although extensive milk production also resulted in a lower daily milk yield

    Growth of bifidobacteria in mammalian milk

    Microbial colonization of the mammalian intestine begins at birth, when from a sterile state a newborn infant is exposed to an external environment rich in various bacterial species. An important group of intestinal bacteria comprises bifidobacteria. Bifidobacteria represent major intestinal microbiota during the breast-feeding period. Animal milk contains all crucial nutrients for babies’ intestinal microflora. The aim of our work was to test the influence of different mammalian milk on the growth of bifidobacteria. The growth of seven strains of bifidobacteria in human milk, the colostrum of swine, cow’s milk, sheep’s milk, and rabbit’s milk was tested. Good growth accompanied by the production of lactic acid was observed not only in human milk, but also in the other kinds of milk in all three strains of Bifidobacterium bifidum of different origin. Human milk selectively supported the production of lactic acid of human bifidobacterial isolates, especially the Bifidobacterium bifidum species. The promotion of bifidobacteria by milk is species-specific. Human milk contains a key factor for the growth of specific species or strains of human-origin bifidobacteria compared to other kinds of milk. In contrast, some components (maybe lysozyme) of human milk inhibited the growth of Bifidobacterium animalis. Animal-origin strains of bifidobacteria were not able to significantly grow even in milk of animal origin, with the exception of B. animalis subsp. lactis 1,2, which slightly grew in sheep’s milk

    Effect of Lupinus albus as protein supplement on yield, constituents, clotting properties and fatty acid composition in ewes' milk

    The effect of feeding lupin seeds (Lupinus albus L.) as an alternative protein source in ewe diets was investigated. Two groups of 18 Sarda ewes were fed two different isonitrogenous diets: with lupin (L) seed, given after 12 h soaking, or soybean meal (SBM) as the main protein source. DMI, variations of body weight and milk production were unaffected by the treatment. Although not statistically significant, in the group fed L diet the production of milk fat and protein was higher. Clotting properties of milk were similar for the two treatments, probably due to the small differences in the milk protein contents. The fatty acid profile of milk was affected by treatment with a larger content of short (14.19 wt% versus 12.26 wt%)- and medium (49.37 wt% versus 47.76 wt%)-chain fatty acids in milk from ewes fed the L diet. CLA content was unaffected by treatment. Triglyceride content of fat from the two diets reflects the milk fatty acid composition. Indeed, milk from L diet showed a higher level of medium-chain triglycerides, which are of particular interest to consumers with concerns over health and heart disease. The inclusion of lupin seed in the diet of lactation ewes can be a means of achieving a more desirable triglyceride profile in milk fat. Milk with enhanced nutritive quality may promote wider market penetration of sheep dairy products

    Chlorinated organic contaminants in breast milk of New Zealand women.

    Breast milk samples from 38 women in New Zealand were analyzed for organochlorine pesticides, polychlorinated biphenyls (PCBs), polychlorinated dibenzo-p-dioxins (PCDDs), and polychlorinated dibenzofurans (PCDFs) as part of a World Health Organization collaborative study of breast-milk contaminants. The women were recruited from two urban areas (Auckland and Christchurch) and two rural areas (Northland and North Canterbury) in the North and South Islands of New Zealand. The best predictor of contaminant concentrations in breast milk was found to be the age of the mother. Regional differences were found for hexachlorobenzene, dieldrin, and pp-DDE, reflecting historical use patterns. Urban-rural differences were found for several PCBs, PCDDs, and PCDFs when contaminant concentrations were calculated on a whole-milk basis. However, these differences could be attributed to variation in breast-milk fat concentrations between urban and rural mothers. Urban mothers had about 50% more breast-milk fat than rural mothers. Evidence suggests that breast-milk consumption by babies is regulated by caloric intake. Almost all of the caloric content of milk is in the fat fraction. This suggests that breast-milk contaminant levels calculated on a whole-milk basis do not necessarily reflect the relative levels of exposure of infants to these contaminants. However, the factors that influence breast-milk fat concentration deserve further study

A representative linear programming model of an average Irish milk processor was developed in order to determine the marginal values of the milk components and to compare the value of milk under the Multiple Component Pricing system with the value under the current milk pricing practice.     Cow's milk is large in contributing to meeting the needs of people in developing countries to meet nutritional fulfillment. Cow's milk has increased imports due to the problem of cow disease which cannot meet the needs of the Indonesian people who increase every year milk consumption every year. This study aims to analyze milk production trends and factors affecting milk production of dairy cows in Indonesia. The type of data used is secondary data with a vulnerable time of 2012-2021. The analysis methods used are trend analysis and multiple linear regression analysis. The results showed that the trend of milk production of dairy cows decreased from 2012-2015 and rose again from 2016-2021. Milk prices and cows population simultaneously affect the volume of milk production of dairy cows in Indonesia
