This article makes a comparative analysis of two cookbooks considered relevant in their countries: Le Cuisinier Impérial, published in France in 1806, and Cozinheiro Imperial, published in Brazil in 1840. We sought to investigate the possible relationships and influence of the European compendium on the national one. Previous research states that the preparations contained in the Brazilian work were copied from Portuguese cooking treatises. However, there is a consensus among Brazilian historiography that in the 19th century, Brazil aimed to distance itself from the former metropolis and get closer to the French ideal, considered a model of civility and refinement, including in eating habits and table manners. By examining the structures of the printed material and the recipe statements, we can see that the French publication may have been another source of “inspiration” for the Brazilian one.Este artigo analisa de forma comparada dois livros de receitas considerados relevantes em seus países: Le Cuisinier Impérial, publicado na França em 1806 e Cozinheiro Imperial, publicado no Brasil em 1840. Procuramos investigar as possíveis relações e a influência do compêndio europeu sobre o nacional. Pesquisas anteriores afirmam que as preparações contidas na obra brasileira foram copiadas de tratados de cozinha portuguesa. No entanto, é consenso entre a historiografia brasileira que no século XIX, o Brasil almejava se distanciar da antiga metrópole e se aproximar do ideal francês, considerado modelo de civilidade e refinamento, inclusive nos hábitos alimentares e modos à mesa.
