PEMBUATAN BUBUK PEWARNA ALAMI DARI DAUN SINGKONG (Manihot Esculenta Crantz) MENGGUNAKAN METODE FOAM MAT DRYING DENGAN PENGERINGAN MICROWAVE

Abstract

Cassava leaves (Manihot esculenta crantz) contain alkaloids, tannins, saponins, flavonoids and phenolic compounds. The tannin compound content in cassava leaves is a brown dye which is the main pigment that can be used as a natural coloring agent. This research aimed to determine the optimal concentration of maltodextrin and drying time for producing natural dyes using the foam mat drying method. The process began by grinding cassava leaves and extracting the resulting cassava leaf powder with distilled water in a 1:10 ratio for 36 hours using the maceration method to obtain the extract. Then the extract was filtered, centrifuged and added with maltodextrin with varying concentrations of 3%, 5, 7%, 9%, 11% (w/v) and a foaming agent, namely Tween 80 with a concentration of 1.5% (v/v). The natural dyes were dried using a microwave based on time variations of 25 minutes and 40 minutes. The resulting natural dye products were analyzed for water content, solubility, yield and tannin content. The results showed that the best maltodextrin concentration and drying time was 11%, with a drying time of 40 minutes with a water content of 4.76%, solubility of 98.73%, yield of 11.45% and tannin content of 0.5 ppm.
