Sabores y colores del semidesierto zacatecano: cabuches y flores de palma. Dos alimentos ancestrales en Mazapil, Zacatecas

Abstract

The environmental history of food allows us to analyze the socio-environmental practices related to food, understanding them in a spatial and temporal dimension. With the help of disciplines such as ecology, botany, anthropology and history, food systems are analyzed from a transdisciplinary perspective. In this article, the methodology of environmental history is used to study two characteristic foods of the Chihuahuan desert: cabuches and palm flowers (chochas), the analysis focuses on Mazapil, a municipality in the state of Zacatecas and part of the Zacatecas semi-desert. The objective is to analyze the cultural practices around wild edible plants: cabuche and palm flower, ancestral foods of the semi-desert. The article is divided into three parts: Mazapil: “Biodiversity and socio-environmental conditions”, “Caboche and palm flower. Foods from the Chihuahuan desert”, and “Ancestral foods in Mazapil: cabuche and palm flower”.La historia ambiental de los alimentos permite analizar las prácticas socioambientales relacionadas con la alimentación, comprenderlos en una dimensión espacial y temporal. Con la ayuda de disciplinas como la ecología, botánica, antropología e historia se analizan los sistemas alimentarios con una perspectiva transdisciplinaria. En el presente artículo se utiliza la metodología de la historia ambiental para estudiar dos alimentos característicos del desierto chihuahuense: cabuches y flores de palma (chochas), el análisis se centra en Mazapil, municipio del estado de Zacatecas y parte del Semidesierto Zacatecano. El objetivo es analizar las prácticas culturales entorno a las plantas comestibles silvestres: cabuche y flor de palma, alimentos ancestrales del semidesierto. El artículo se divide en tres partes: Mazapil: “Biodiversidad y condiciones socioambientales”, “Cabuche y flor de palma.
