Homogenization and pasteurization are common processing techniques used in the dairy industry on bovine milk to produce a uniform fluid that does not separate while stored and is virtually free from harmful bacteria. Many raw milk proponents however argue that these processes damage the nutritional value and in turn could be harmful to the gut microbiota. Many articles have been published, studying the relationship of milk processing and its subjection to in vitro digestion, however little information is available about the effects of milk on the small intestine microbiome.
