Abstract

The bachelor thesis on topic of Modern quality management tools was written at the Departement of Post-Harvest Technology of Horticultural Products, Faculty of Horticulture, Mendel University in Brno in the years 2013-2014. The main objective of this work was to characterize and compartmentalize methods and tools for quality assurance. The introduction familiarizes the reader with the current status of this issue. The work discusses the importance and objectives of management quality. It further proposal for the use of selected tools of quality control in the production of tomato paste
