Findings of Escherichia coli in minced meat products

Abstract

Mikrobiološka pretraga hrane jedan je od vrlo važnih procesa kontrole u proizvodnji i prometu hrane. Tako omogućavamo stavljanje sigurne hrane na tržište, ali i konzumaciju zdravstveno ispravnih namirnica te sprječavanje pojave bolesti koje se mogu prenijeti hranom kontaminiranom mikroorganizmima. U ovom radu pretraženo je 50 uzoraka mesnih pripravaka na nalaz bakterije Escherichia coli čiji dokaz ukazuje na fekalno zagađenje hrane. Samo u 8% uzoraka bakterija je dokazana u broju manjem od 500 cfu/g, što govori da su svi analizirani uzorci u ovom istraživanju pokazali zadovoljavajuće rezultate u odnosu na propisane mikrobiološke kriterije za hranu.Microbiological examination of food is one of the most important process of control in food production and transport. This allows us to put safe food on the market but also the consumption of healthy food and prevention of spreading diseases that can be transmitted by food which is contaminated by microorganisms. In this paper, 50 samples of meat products were screened for the presence of Escherichia coli bacteria, whose evidence indicates faecal contamination of food. Just in8% of samples bacteria was proven to be less than 500 cfu / g, which suggests that all samples analyzed in this study showed satisfactory results in relation to the microbiological criteria set for food
