Abstract
國內菇蕈類年產量約14萬公噸,產值約88億元,佔蔬菜總產值475億元之18%左右。菇蕈類屬於資本與技術密集之產業,投入生產之門檻較高,又消費者逐漸體認食用菇蕈產品之益處,消費量逐漸增加,評估菇類產業仍具有競爭潛力。國內菇蕈產業雖具產品安全衛生,採收後處理技術穩定,且業者操作靈活、轉型速度快等之優勢,惟面對中國菇類產業發展迅速,並自日本、韓國等國家引進生產設備與技術,菇類生產瓶頸包括:木屑來源逐漸減少,進口木屑價格高,增加生產成本,菌種弱化及國內消費有淡旺季等問題,加以部分業者赴大陸投資,使得國內既有優勢逐漸喪失,未來亟需開發替代性介質並研發菌種保存及建立檢定技術,建立品牌及加強行銷,以安全、衛生、新鮮及優質特色區隔市場,以確保既有市場,同時輔導業者拓展外銷開發新市場
