Nutritional status, yield and quality of cabernet sauvingnon grapevine in soils of the Santa Catarina Highlands

Abstract
The climatic conditions of highlands of Santa Catarina region presents suitable for
grapevine production, resulting in adequate grape color, smell and flavor for fine wine
production. On the other hand, the soils are acid and present high contents of
organic matter, with risks of excess of vigor, with consequent occurrence of fruit
diseases and reduction of grape quality, related with high nitrogen availability after
liming. This work had the objective of evaluate soil chemical properties and their
relation with the nutritional state, yield, sanity and quality of the grape. The research
was carried out during the 2007/2008 season, in commercial vineyards of cv.
Cabernet Sauvignon (Vittis vinífera L.), grafted on Paulsen 1103 rootstock, in São
Joaquim, SC, with altitude between 1050 and 1350 m, in 21 experimental plots of
240 m2, with four replicates. The evaluations consisted of soil chemical analysis of
acidity and macronutrients availability; contents of N, P, K, Ca and Mg in the foliar
tissue; qualitative components of the must; yield and fruit sanity at the harvest. The
soil H2O pH ranged from 5,1 to 6,7, and it apparently did not influence on yield
components and grape quality. The soil had high C, K, Mg and Ca contents. While, in
the foliar tissue low N and Ca contents and high K/Mg ratio were observed. The
mean grape yield was of 6,4 Mg ha-1, correlated positively by the CEC and
exchangeable soil Mg. The average losses of fruits for fungal diseases were of 13%,
positively correlated with N in the soil and in the tissue and K in the soil. The bunch
stem necrosis (BSN) disturb reached average of 11%, and caused by positively
correlated with the contents of K in the soil and contents of K and N in the tissue. The
values of the pH of must were considered high, and the contents of total acidity (TA)
were low, that reflect in high ratio to soluble solids and total acidity (SS/TA), this
characteristic were positively correlated with K saturation in the soil CEC. The late
harvest increased the SS/TA ratio, pH values and fungal diseases in bunches and
reduced the grape color intensityAs condições climáticas da região serrana de Santa Catarina são favoráveis à
produção de uvas viníferas, possibilitando frutos com coloração, aroma e sabor
adequados à elaboração de vinhos finos. Por outro lado, os solos são ácidos e
apresentam altos teores de matéria orgânica, com risco de excesso de vigor com
conseqüente ocorrência de doenças e redução da qualidade da uva, relacionados à
alta disponibilidade de nitrogênio após a calagem. Este trabalho teve como objetivo
avaliar atributos químicos do solo e sua relação com o estado nutricional,
rendimento, sanidade e qualidade da uva. A pesquisa foi conduzida durante a safra
de 2007/2008, em vinhedos comerciais de Cabernet Sauvignon (Vittis vinífera L.),
sobre porta-enxerto Paulsen 1103, em São Joaquim, SC, com altitude entre 1050 e
1350 metros, em 21 glebas de 240 m2, com quatro repetições. As avaliações
consistiram de determinações químicas da acidez e disponibilidade de
macronutrientes no solo; teores de N, P, K, Ca e Mg no tecido vegetal; componentes
qualitativos do mosto; rendimento e sanidade da uva na colheita. O pH em água do
solo variou de 5,1 a 6,7 e, aparentemente não influenciou o rendimento e a
qualidade da uva. Os solos apresentaram altos teores de C, K, Mg e Ca, enquanto,
no tecido vegetal observaram-se baixos teores de Ca e N, e alta relação K/Mg. O
rendimento médio de frutos foi de 6,4 Mg ha-1, mostrou correlação positiva com a Mg
trocável e CTC efetiva do solo. As perdas médias de frutos por doenças fúngicas
foram de 13 % que se correlacionaram positivamente com teores de N no solo e
tecido e K extraível do solo. O dessecamento de ráquis atingiu média de 11% dos
cachos e se correlacionou positivamente com os teores de K extraível do solo e
teores de K e N no tecido. Os valores de pH do mosto se situaram em faixa
considerada alta e teores de acidez total (AT) baixos, refletindo em alta relação
sólidos solúveis e acidez total (SS/AT), característica correlacionada positivamente
com a saturação por K do solo. O retardamento da colheita aumentou a relação
SS/AT, o pH do mosto e as doenças fúngicas nos cachos, e diminuiu a intensidade
