The paper reports on research that developed a dynamic model which describes the most important process variables, including beta-galactosidase activity in the yeast. Using this model and a growth model based on exhaust gas analysis it was possible to estimate ethanol and enzyme production indirectly from the results of the gas analysis. In another report of this research the use of the extended Kalman filter for the estimation of yeast concentration by on-line parameter estimation is described
