Abstract
Abstract: Cyphomandra batacea or tamarillo, originated from South America. It is a plant from the
Peruvian Andes region of South America. The fruit is purplish and egg-shaped. The
purposes of this experiment were to (1) know the good characteristics of a tamarillo to use
in jam-making, (2) know tamarillo jam processes, (3) know characteristics of good
tamarillo jam, (4) know acceptance of panelists to tamarillo jam. This experiment used
organoleptic tests method. The results showed that (1) good tamarillo jam making using the
ripe tamarillo, purplish and sweet, (2) the process were selecting the fruit, grinding eggplant
into juice, filtering, cooking, mixing additives, and packaging, (3) natural red tamarillo jam,
soft texture, sweet flavor and natural fruit flavored, (4) acceptance of tamarillo jam
according to panelist, agree with the color, agree with the texture as it is soft, agree with the
smell as it has natural scent, agree with the taste. Expiry of the tamarillo jam within room
temperature is approximately a month, whereas store in refrigeration is three months
