Abstract
The consumption of nutritional supplements such as whey protein has been constantly increasing among athletes and physical exercise practitioners. It is extremely important for the consumer that the nutritional information contained in these labels are according to the requirements set in the current Brazilian legislation of ANVISA. The objective of this study was to determine the amount of protein of different national brands of whey protein, concentrated and isolated, as well as to compare the values obtained with the data presented in the labels of these supplements. The protein content of five samples of whey protein concentrate and five samples of isolated whey protein, obtained in the cities of Porto Alegre and Canoas were analyzed. The analyzes were performed in quadriplicate using the Kjeldahl semi-micro method. The results obtained were compared with the values expressed on the product labels, as recommended in the legislation. The 10 analyzed samples presented in the percentage analysis contains lower protein content in relation to the label. However, in relation to the legislation, all samples were adequate for the criteria of 20% difference in relation to the label and contain 10g protein / portion, with only one product containing <50% of the total energetic value in the portion. The inadequacy of the protein content observed in the whey protein samples occurred when analyzing the percentage concentrations. However, most of the samples were adequate according to the legislation, with the exception of only one brand, which presented lower energy content than what was recommended.O consumo de suplementos nutricionais, como whey protein, vem aumentando constantemente entre atletas e praticantes de exercÃcio fÃsico. É de extrema importância para o consumidor que a informação nutricional contida nos rótulos destes produtos respeite as exigências previstas na legislação Brasileira. O objetivo deste estudo foi determinar a quantidade de proteÃna de diferentes marcas nacionais de whey protein, concentrado e isolado, bem como comparar os valores determinados com os dados apresentados nos rótulos desses suplementos. Foi analisado o teor proteico de cinco amostras de whey protein 100% concentrado e cinco amostras de whey protein 100% isolado, obtidas nas cidades de Porto Alegre e Canoas. As análises foram realizadas em quadriplicata através do método semi-micro Kjeldahl. Os resultados obtidos foram comparados com os valores expressos nos rótulos dos produtos, e com o preconizado na legislação. As 10 amostras analisadas apresentaram na análise percentual menor teor proteico em relação ao rótulo. Entretanto, em relação à legislação, todas amostras estavam adequadas quanto aos critérios de 20% de diferença em relação ao rótulo e conter 10,0 g proteÃna/porção, com apenas um produto contendo <50% do valor energético total na porção. A maioria das amostras demonstrou adequação de teores de proteÃna na porção conforme a legislação, entretanto, todos os produtos, independentemente de ser whey protein concentrado ou isolado apresentaram menores teores de proteÃna na porção em relação aos seus rótulos
