cantidad de licopeno y de betacaroteno presente en mg/L y mg/g de extracto;
necesarias para evitar la oxidación del licopeno.**This investigation compares the lycopene carotenoid yield extracted from the
tomato (Lycopersicum Esculentum) using solvent mixtures that cover the entire range of polarity. Using tomatoes without any form of pretreatment, extractions
were characterized through HPLC to determine the quantity of lycopene and
beta-carotene present in mg/L and mg/g of extract. For each extraction, the relationship
between sample weight, solvent volume, and extraction time were also
defined. These parameters were used to design a flow chart for the extraction
processes and the necessary conditions for avoiding oxidation of the lycopene
