分叉双歧杆菌在固态发酵体系中的产酸特性

Abstract
以液态发酵(SmF)为参照体系,对分叉双歧杆菌(B.bifidum)在固态发酵(SSF)体系(培养基含量为54.5%和68.8%)中的生长特性进行了研究。结果表明:1、在SSF体系中B.bifidum的产酸特性与SmF体系有显著的差异,在SSF中既产生乳酸、乙酸也产生丙酸和丁酸,在SmF中却不产生丙酸和丁酸,可以推测在肠道中,B.bifidum 在可能分泌丙酸和丁酸以实现其特殊的生理作用,如调节
