CARACTERIZAÃÃO DE BILIMBÃ (Averrhoa bilimbi L)

Abstract

O presente trabalho teve por objetivo avaliar as características químicas e físico-químicas da polpa do bilimbí produzidas na cidade de Araguatins TO. Frutos maduros provenientes de um plantio localizado no setor de fruticultura do IFTO, foi realizada a analise física dos frutos e em seguida despolpados e armazenados a -20°C para posteriores análises. Foi determinada as análises químicas e físico-químicas: pH (0,77); sólidos solúveis totais (3,69°Brix); acidez total titulável (1,27g.100g-1); SS (3,69); vitamina C (126,20 mg de AA.100g-1); açúcares totais (2,14g.100g-1); açúcares redutores (0,80g.100g-1); Os resultados mostram que a polpa de bilimbí possui um baixo teor de proteína e lipídeo, é rica em carboidratos e apresenta uma significativa quantidade de vitamina C.
