Abstract
O presente trabalho teve por objetivo avaliar as caracterÃsticas quÃmicas e fÃsico-quÃmicas da polpa do bilimbà produzidas na cidade de Araguatins TO. Frutos maduros provenientes de um plantio localizado no setor de fruticultura do IFTO, foi realizada a analise fÃsica dos frutos e em seguida despolpados e armazenados a -20°C para posteriores análises. Foi determinada as análises quÃmicas e fÃsico-quÃmicas: pH (0,77); sólidos solúveis totais (3,69°Brix); acidez total titulável (1,27g.100g-1); SS (3,69); vitamina C (126,20 mg de AA.100g-1); açúcares totais (2,14g.100g-1); açúcares redutores (0,80g.100g-1); Os resultados mostram que a polpa de bilimbà possui um baixo teor de proteÃna e lipÃdeo, é rica em carboidratos e apresenta uma significativa quantidade de vitamina C.
