Chemical composition of chestnut from several natural habitats of Zrinska gore

Abstract

Cilj ovog rada bio je određivanje kemijskog sastava 10 uzoraka kestena prikupljenih na području Zrinske gore te usporediti dobivene podatke s rezultatima iz drugih znanstvenih radova. Određen je udio vode, sirove masti, bjelančevina, pepela, reducirajućih šećera te saharoze. Dobi-veni rezultati su: udio suhe tvari kretao se od 45,83% do 52,65 %, udio vode 47,35-54,17 %, udio pepela kretao se od 0,93 % do 1,29 %, udio sirove masti kretao se od 0,92% do 2,71 %, udio proteina kretao se od 2,24 % do 3,46 %, udio škroba kretao se od 28,11 % do 35,14 %, udio reducirajućih šećera kretao se 0,75 do 1,07 % te udio saharoze kretao se od 6,98 % do 8,58 %.In this paper, the 10 given samples of chestnuts were collected from the area of Zrinska gora. Basic chemical composition of chestnuts has been determined such as: water content, fat content, protein, starch, reducing sugars and sucrose. Results showed that water content ranged 47,35-54,17 %, content of dry matter was 45,83-52,65 %, ash content was 0,93-1,29 %, fat con-tent was from 0,92 to 2,71 %, protein content 2,24-3,46 %, starch content was from 28,11 to 35,14 %, reducing sugars was from 0,75 to 1,07 % and saccharose content was 6,98-8,58 %
