Abstract
Sastav i sadržaj fenolnih spojeva bobice grožđa uvelike ovisi o genotipu vinove loze, okolišnim uvjetima te uvjetima samog uzgoja. U ovom radu, istraživanje je provedeno na 19 sorata nastalih međuvrsnim križanjem sorata vrste Vitis vinifera s drugim vrstama roda Vitis te na dvije sorte Vitis vinifera sa ciljem utvrđivanja sastava i sadržaja polifenola male molekulske mase u sjemenkama bobica grožđa. Detaljnom statističkom obradom podataka utvrđene su značajne razlike u sastavu i sadržaju polifenola sjemenki bobica grožđa različitih sorata. Dobiveni rezultati mogu pomoći pri odabiru sorte za izdvajanje određenih polifenola te njihovoj primjeni u različitim granama industrije zbog njihovih, već dokazanih, protuupalnih, antimikrobnih i antitumorskih svojstava.The composition and content of polyphenolic compounds of grape berries are largely dependent on the genotype of grapevine, environmental conditions, and agricultural practice, as well. In this paper, the research was conducted on 19 varieties created by the interspecific crossing of the Vitis vinifera varieties with other Vitis species and on two varieties of Vitis vinifera. The aim of present study was a determination of the composition and content of small molecular mass polyphenols in grape berry seeds. Detailed statistical data analysis was revealed significant differences among the composition and content of polyphenols of grape berry seeds of different varieties. The obtained results could help in the selection of varieties for the isolation of certain polyphenols and their application in different branches of the industry due to their already proven, anti-inflammatory, antimicrobial and anti-tumor properties
