Chemical composition of chestnut from Istria county and Primorje–Gorski Kotar County

Abstract

Svrha rada je ispitivanje kemijskog sastava (suha tvar, voda, škrob, pepeo, sirove masti, sirovi proteini, reducirajući šećeri, saharoza) kestena na pojedinim područijima RH radi utvrđivanja razlika ovisno o zemljopisnom položaju. Obrađeno je 40 uzoraka sa područja Buja, Cresa, Poreča i Učke. Dobiveni rezultati su : maseni udio vode 48 – 60 %, ostali parametri izraženi na suhu tvar su : pepeo 1,8 – 2,5 %, sirove masti 2,1 – 4,8 %, sirovi proteini 4,7 – 7,5 %, škrob 62 – 64 %, reducirajući šećeri 1 – 2 %, te saharoza 14 – 21 %. Statistički je utvrđeno značajnije odstupanje između uzoraka različitih lokaliteta, dok unutar samih lokaliteta ne postoje veće razlike između uzoraka.The purpose of this work is to examine the chemical composition (dry matter, water, starch, ash, fats, proteins, natural invert, total invert, sucrose) in some regions of the Republic of Croatia to determine the differences depending on the geographic position. 40 samples were taken from Buje, Cres, Poreč and Učka. The results obtained are: water content of water 48 – 60 %, other parameters expressed on dry matter are: ash 1.8 - 2.5 %, crude fats 2.1 - 4.8 %, crude proteins 4.7 - 7 , 5 %, starch 62-64 %, reducing sugar 1 – 2 %, and sucrose 14 – 21 %. A statistically significant difference between the samples of different localities was found, whereas within the localities there was no greater difference between the samples
