Determination of protein content in formula

Abstract

Majčino mlijeko je najbolja hrana za dojenčad, no ukoliko dojenje nije moguće, početna i prijelazna hrana za dojenčad predstavljaju njegovu adekvatnu zamjenu, u skladu s prehrambenim potrebama dojenčadi. Budući da je dojenčad posebna i izrazito osjetljiva populacijska skupina, nužne su redovite kontrole sastava, kvalitete i zdravstvene ispravnosti početne i prijelazne hrane za dojenčad. Cilj ovoga rada bio je odrediti udio proteina u uzorcima hrane za dojenčad, usporediti ih s deklaracijama proizvoda te utvrditi jesu li dobiveni rezultati u skladu s Pravilnikom o početnoj i prijelaznoj hrani za dojenčad (NN 39/13). U 12 uzoraka hrane za dojenčad domaćih i stranih proizvođača, dostupnih na hrvatskom tržištu, određen je udio proteina Kjeldahlovim postupkom. Udio proteina u 11 analiziranih uzoraka je bio u skladu s Pravilnikom i deklaracijom, dok je udio proteina u jednom uzorku na gornjoj granici udjela dozvoljenog Pravilnikom, a odstupanje od deklaracije je veće od dozvoljenog.Breast milk is the best food for infants. However, if the breastfeeding is not possible, infant and follow-on formulas present its adequate replacement, in accordance with nutritional requirements of infants. Because infants are special and very sensitive population group, there is a need for continuous production system, quality and safety controls of infant and follow-on formulas. The aim of this work was to determine protein content of infant formula samples and to compare it with declared values and national regulations for infant and follow-on formulas (NN 39/13). Twelve samples of formula of domestic and foreign manufacturers that are available on Croatian market were analyzed. Kjeldahl method was applied for protein content determination. Obtained results had shown that protein content of eleven samples was in accordance with national regulations (NN 39/13) and declared values, while one sample had protein content on the upper level purposed by regulations, and was not in accordance to declared value
