Production and basic quality parameters analyses of domestic white wine from Hrvatsko zagorje

Abstract

Cilj završnog rada bio je proizvesti i analizirati domaće bijelo vino podrijetlom iz privatne obiteljske vinarije Ilčić, Hrvatsko zagorje. U analitičko-kemijskom laboratoriju Prehrambeno-biotehnološkog fakulteta analizirani su osnovni parametri kakvoće proizvedenog domaćeg vina pomoću aparatura za određivanje šećera, alkohola, sumpora i kiselina, tankoslojne kromatografije za određivanje jabučne, limunske i vinske kiseline te enzimskog kita za određivanje glicerola. Rezultati analiziranog domaćeg bijelog vina su u skladu s vrijednostima Pravilnika o vinu iz 1996. godine.The aim of final work was to produce and analyze domestic white wine from family vineyard Ilčić, in Hrvatsko zagorje. In the analytical chemical laboratory at Faculty of Food Technology and Biotechnology produced domestic white wine was analyzed using basic quality parameters. Laboratory methods, chemical procedures and apparatus were used for detecting sugar, alcohol, sulfur, acids while thin-layer chromatography was used for detecting malic, citric and wine acid. For detecting glycerol Enzyme kit was used. The results of analyzed domestic white wine were in accordance with the Croatian wine regulations from year 1996
