Correlation between M. Longissimus dorsi area and carcass characteristics of Simmental and Simmental x Holstein young bulls

Abstract

Cilj rada bio je utvrditi povezanost površine musculus longissimus dorsi (MLD) s osnovnim klaoničkim pokazateljima te s odlikama kvalitete trupa na liniji klanja za mušku junad križance mesnog simentalca i holštajna te čistokrvnu simentalsku junad. Istraživanje se provelo na 23 trupa muške tovne junadi od kojih je bilo 11 simentalaca i 12 križanaca simentalca i holštajna. Križanaci su imali veću završnu tjelesnu masu (615,91 kg) u odnosu na simentalsku junad (580,09 kg), veću masu toplih i hladnih polovica, bolji bruto i neto dnevni prirast. Utvrđena je pozitivna povezanost površine MLD-a s klasom kojom su ocjenjeni trupovi simentalske junadi i križanca simentalca i holštajna (p<0,05) te s masom toplih i hladnih polovica. Pozitivna korelacija zabilježena je između mase toplih i hladnih polovica sa svim izmjerama buta (duljina, opseg, širina i dubina) uz visoke razine značajnosti (p<0,01).The aim of this research is to determine correlation between m. longissimus dorsi and carcass characteristics of the crossbred (Simmental x Holstein) and purebred (Simmental) young bulls. The research included 23 male carcasses, 12 of which were crossbred and 11 were purebred. Crossbred Simmental x Holstein had higher final body weight (615.91 kg) in regard to purebred Simmental (580.09 kg), higher hot and cold carcass weight and higher daily gain. Positive correlation was determined between MLD area and EUROP conformation score by which were rated Simmental and crossbred Simmental x Holstein carcasses (p<0.05) including hot and cold carcass weight. Furthermore, positive correlation was determined between hot and cold carcasses with taken round measurements (length, radius, width and depth)
