Characterization of beta-1,3-glucan isolated by diferent methods from yeast Saccharomyces cerevisiae

Abstract

β-glukan, homopolimer glukoze, ima sposobnost regulacije imunološkog sustava. Stanična stijenka pivskog kvasca Saccharomyces cerevisiae dostupan je izvor β-1,3-glukana. Glukan iz kvasca zaostalog nakon proizvodnje piva je izoliran trima različitim metodama, te osušen: na zraku, liofilizacijom i raspršivanjem. U tako dobivenim preparatima β-glukana određivana je veličina čestica, kapacitet vezanja vode i ulja, sposobnost bubrenja, biološka aktivnost, elektronskom mikroskopijom utvrđena im je mikrostruktura, te je napravljena FT-IR spektroskopija za karakterizaciju glukana.β-glucan, a homopolymer of glucose, is well-known regulator of immune system. The cell-wall of yeast Saccharomyces cerevisiae is an available source of β-1,3-glucan. Glucan was isolated from brewer΄s yeast with three different methods and dried on air, in a lyophilisator and in spray-drying chamber. In such obtained β-glucan preparations dimension of particles, water and oil apsorption capacities, swelling capabilities and biological activity were measured. Microstructure of glucan was analysed by electronic microscopy and characterized by FT-IR spectroscopy
