Comparison ofdifferent keeping systems of black slavonian pig-fajfer pig

Abstract

Istraživanje je provedeno na 60 svinja crne slavonske pasmine svinja koje su bile držane u ekstenzivnom sustavu (n=30) te na dubokoj stelji (n=30). Svinje su uzgajane do završnih težina od 135kg te su zaklane u dobi od 550 dana. Određivani su pokazatelji svojstava polovica: masa polovica, dužina polovica, dužina i opseg buta i debljina slanine i mišića. Od klaoničkih svojstava određivani su pH45 u butu i najdužem leđnom mišiću (MLD), pH24 u butu i najdužem leđnom mišiću, boja mesa i sposobnost vezanja vode. Rezultati istraživanja su ukazali na to da svinje držane na stelji imaju statistički visoko značajno više završne težine, dok su kod svinja uzgajanih u ekstenzivnom sustavu utvrđena statistički značajna bolja kvaliteta mesa (boja mesa i drip loss). Držanje svinja u oba sustava je u skladu s čimbenicima dobrobiti svinja te imaju pozitivan učinak na zdravlje svinja. Oba sustava držanja su pogodni za uzgoj crne slavonske svinje.A study was carried out on 60 pigs of Black Slavonian breeds that were kept in extensive keeping conditions (n = 30) and on a deep litter (n = 30). Pigs were grown up to the final weight of 135kg and slaughtered at 550 days. Carcass traits were measured: the half weight, the length of the half, the length and the extent of silk and the thickness of bacon and muscle. Meat properties that were measured was, pH45 in the ham and the longest muscle (MLD), pH24 in the ham and the longest muscle, the color of the meat and the ability to bind water. The results of the research have shown that the pigs kept on the deep litter have statistically significantly higher end weights, while statistically significant better meat quality (meat dye and drip loss) was found in the extensively breeded pigs. Keeping the pigs in both systems is in line with the factors of the welfare of the pig and also have a positive effect on the health of the pig.
