ABSTRACT
This research is aimed at (1) looking for and explaining the types of culinary which is
considered as original culinary from Surakarta palace and as adapted culinary from the outside,
(2) describing acculturation and adaptation process of culinary culture at Surakarta palace, (3)
describing culinary used for tradition ritual and examining symbolic meaning containing in the
proponent culinary in tradition ritual as tangible cultural expression, (4) examining whether or
not the relationship between culinary and social stratification prevails in the society.
The research method is qualitative research. The type of the research is analytic descriptive.
Data collecting technique is conducted through in depth interview which is flexible and open,
direct observation, document study. The collected data are analyzed qualitatively. To assure
and develop the collected validated data, triangulation technique is employed in the form of
data triangulation and theory triangulation.
After the research is conducted through various steps (research method), it can be
concluded that: (1) culinary at Surakarta palace consisted of daily culinary, sesaji, and
wilujengan. Daily culinary staple food, snacks, and beverages. Sesaji and wilujengan is used in
various culinary of traditions ceremony, (2) acculturation and adaptation processes of culture
culinary in Surakarta palace has long occured through a variety of cultural intersection with
other nations, by European, Tionghoan, Indian, and Arabian culinary culture (3) up until now,
Surakarta palace has been performing both religious and non religious tradition ritual
completed with proponent culinary which is functioned not only for complement but also
symbolic meaning related to life and divine values, (4) culinary in the society of Surakarta
palace does not only signify the presence of social stratification, but also clarify the
stratification in the society of Surakarta palace clearly shown by consumption activity, other
than clothing. The influence of European culture confirms the social stratification construction
in the society of Surakarta palace, predominantly in the European menu serving, tools usage
and table manner which demonstrate prestige. The higher individual’s position in the palace
bureaucracy, the higher quality and quantity the palace royal and elite have.
