[SPA] Los frutos rojos del centro y sur de Chile tienen un gran potencial en la industria alimentaria gracias a sus altos contenidos de polifenoles, compuestos que han sido relacionados con claros beneficios en la salud humana. Se comparó tres bayas nativas: arrayan, murtilla y calafate. Se determinó in vitro la capacidad antioxidante por dos métodos *DPPH y FRAP y perfil químico por HPLC-DAD. De los tres berries, calafate registró el valor más alto en cuanto a polifenoles totales y excelente poder reductor (11279,2±2027,4 μmol Trolox 100g-1 ensayo FRAP y 5235,0±445,9, μmol 100g-1 en DPPH). El perfil químico de antocianinas mostró delfinidina, cianidina, malvidina, petunidina y peonidina en los tres berries. Estos resultados contribuyen a confirmar el uso potencial de estos berries como alimentos funcionales.

Three native berries were compared: myrtle, murtilla and calafate. The antioxidant capacity was determined in vitro by two methods * DPPH and FRAP and chemical profile by HPLC-DAD. Of the three berries, calafate registered the highest value in terms of total polyphenols and excellent reducing power (11279.2±2027.4 μmol Trolox 100 g-1 FRAP assay and 5235.0±445.9, μmol 100g-1 in DPPH). The anthocyanin chemical profile showed delphinidin, cyanidin, malvidin, petunidin and peonidin in the three berries.
