Abstract

Qualitative consumer and processor surveys were carried out to identify awareness, expectations and demands regarding the quality of organic processed-vegetable baby food. The exploratory qualitative analysis was performed through focus groups and in-depth interviews in Germany and Italy. The study delivers important information for the selection and definition of quality-specific critical control points, especially with respect to the quality of the raw materials, and provides directions towards the optimisation of the process qualit
