Abstract
. For decades, all saturated fatty acids have always been judged as the only cause of cardiovascular disease without considering the difference of their sources and the length of their carbon chains. Based on the source, some saturated fatty acid are originated from plants and others are from animal fats. Based on their chemical structures, saturated fatty acids may have short, medium or long chain fatty acids. The differences of their sources or chemical structures can influence the process of lipid metabolism in the body, and also cause different effects on health, especially on cardiovascular health
