Stilbenes are members of the non-flavonoid phenolic compound family and are produced by plant secondary metabolism. They play an important role in the defence mechanism of plants. In particular it has been demonstrated that grape canes can be a rich source of resveratrol and of its polymer viniferin. The aim of the study was to evaluate the effect of storage on the stilbenes content in cv. Pinot Noir canes collected at different times before pruning.   Some samples were stored for one, two or three months at room temperature, other were frozen at –20 ºC, freeze-dried or dried at 40 ºC. The grape canes were ground and extracted with 80% ethanol. Immediate extraction was used as control. The extracts were filtered and the solvent removed by rotary evaporation before HPLC injection.   Regarding the harvest time, the stilbenes concentration increased close to pruning period. The freezing and freeze-drying treatments showed no significant difference with the control in the stilbenes concentration. The drying at 40°C increased slightly the resveratrol content, in particular for the early harvested samples. The highest concentration in resveratrol was found within the samples stored at room temperature, with the maximum reached after two months of storage (40 fold increase compared to the basal level). On the contrary, viniferin content was less affected by the storage time. After a two months storage of grape canes harvested close to the pruning period, a concentration of 3124 ± 5 µg/g and 3520  ± 3 µg/g of dry weight was obtained for resveratrol and viniferin, respectively. These values are comparable to the resveratrol content in the Chinese plant Polygonum cuspidatum.  Considering the antifungal properties of stilbenes, the grape cane extract could be proposed as phytochemical product to increase the plant defence, avoiding or reducing the use of pesticides in crop protection.
