本发明涉及新资源食品加工技术领域,更具体地说,是以菊芋或菊苣为原料的菊粉的制备方法。本发明提供了一种收率高、用水少、能耗少的菊粉的制备方法。其以菊芋或菊苣为原料,依次经过脱皮,切丁,连续逆流提取,加入Ca(OH)2、CO2和活性炭进行一步法除杂、脱色,纳滤膜浓缩,浓缩液经强阳离子和弱阴离子树脂交换柱脱盐后得到高纯度的菊粉。本发明除杂、脱色一步完成,避免了采用双碳法造成的物料浪费,减化了工艺,提高了生产效率
