Ada beberapa alasan yang mendorong untuk dilakukannya penelitian tentang pembuatan surimi, yaitu :meningkatnya permintaan untuk surimi di dunia, hal ini dapat meningkatkan pengolahan ikan dari jenis yang kurang disukaimasyarakat menjadi lebih bernilai ekonomis. Penggunaan surimi sebagai bahan mentah atau bahan baku untuk pengolahan,penyimpanan, penyediaan bahan mentah dan mutunya lebih bagus jika dibandingkan penggunaan ikan segar. Secara umum penelitian ini bertujuan untuk mengetahui proses pembuatan surimi dari ikan leubim hitam dan ikan sarden.Sedangkan tujuan secara khusus yaitu untuk melihat daya simpan surimi dengan menggunakan cryoprotectant. Penelitian inimenggunakan Rancangan Acak Kelompok (RAK) faktorial yang terdiri dari 2 faktor. Faktor pertama yaitu jenis ikan (I) terdiri daridua (2) taraf yaitu I1 = ikan leubim hitam dan I2 = ikan sarden. Faktor kedua yaitu penambahan konsentrasi cryoprotectant (K) yangterdiri dari empat (4) taraf yaitu K1 = (sorbitol 2%, sukrosa 2% dan STPP 0,1%), K2 = (sorbitol 3%, sukrosa 3% dan STPP 0,2%),K3 = (sorbitol 4%, sukrosa 4% dan STPP 0,4%), K4 = (sorbitol 5%, sukrosa 5% dan STPP 0,5%).	Parameter yang dianalisis pada penelitian ini terdiri dari rendemen, kadar air, pH, kadar protein, kadar abu, uji lipat dan ujiorganoleptik (warna dan tekstur). Hasil penelitian menunjukkan bahwa konsentrasi cryoprotectant (K) memberikan pengaruh sangatnyata (P â‰¤ 0,01) terhadap uji lipat penyimpanan minggu ke-8, uji deskripsi warna penyimpanan minggu ke-0, minggu ke-4 danminggu ke-8, uji deskripsi tekstur penyimpanan minggu ke-0, minggu ke-4 dan minggu ke-8 serta berpengaruh nyata (P â‰¤0,05)terhadap kadar air penyimpanan minggu ke-4, kadar abu penyimpanan minggu ke-4. Jenis ikan (I) berpengaruh sangat nyataterhadap kadar protein penyimpanan minggu ke-0, minggu ke-4, minggu ke-8, uji deskripsi tekstur penyimpanan minggu ke-0, sertaberpengaruh nyata (P â‰¤ 0,05) terhadap kadar abu penyimpanan minggu ke-4. Interaksi antara jenis ikan (I) dan konsentrasicryoprotectant (K) memberikan pengaruh nyata (P â‰¤ 0,05) terhadap kadar abu penyimpanan minggu   ke-4.	Berdasarkan hasil uji analisis protein dan uji lipat, perlakuan terbaik pada penelitian ini diperoleh pada perlakuan minggu ke-4,konsentrasi cryoprotectant K4 dan jenis ikan sarden (I2K3), dengan rendemen surimi 71,43%, kadar air 72,03%, kadar protein26,26%, kadarabu 0,98%, pH 6,76, uji lipat 4,00, organoleptik warna (4 (putih) dan tekstur 4 (kenyal)).Kata kunci :Surimi, ikan leubim dan ikan sarden, cryoprotectant, penyimpanan.The Effect of Adding Cryoprotectant on Quality and Storage Products SurimiSurimi is a term in Japanese for meat fish that undergo the process of digestion, washing with ice water, so most of the blood, smell,pigments, water-soluble protein and fat is lost, and the addition of cryoprotectant and frozen storage.There are several reasons thatdrive to do research on the production of surimi, namely: the growing demand for surimi in the world, can improve the processingof fish of species which are less favored societies are becoming more economically valuable. The use of surimi as raw material orfeedstock weeks to the processing, storage, supply of raw materials and better quality than the use of fresh fish.In general, this study aims to know process of making surimi of fish leubim black and sardines. While the specific goals is to knowthe shelf life of surimi using cryoprotectant. This study uses a randomized block design (RAK) factorial consisting of two factors.The first factor is the type of fish (I) consists of two (2) levels ie fish leubim I1 = I2 = black and sardines. The second factor is theaddition of cryoprotectant concentration (K) consisting of four (4) levels is K1 = (sorbitol 2%, 2% sucrose and 0,1% STPP), K2 =(sorbitol 3%, 3% sucrose and STPP 0, 2%), K3 = (4% sorbitol, 4% sucrose and 0,4% STPP), K4 = (sorbitol 5%, 5% sucrose and0,5% STPP).The parameters that were analyzed in this study consisted of yield, moisture content, pH, protein content, ash content, folding testand organoleptic (color and texture). The results showed that the concentration of cryoprotectant (K) gives a highly significanteffect on the test folding storage eightth week, test description color retention week 0, fourth week  and eightth week , testdescriptions texture storage weeks 0, week 4  and week 8 and significant effect on water content storage fourth week, ash contentstorage fourth week. This type of fish (I) very significant effect on the protein content storage week 0, week 4 ,week 8, weekstorage test texture description 0, and significant effect on ash content storage fourth week. Interaction between fish species (I) andthe concentration of cryoprotectant (K) significant effect on ash content storage fourth week.Based on the  results and  analysis of protein and folding test, the best treatment in this study was obtained at treatment fourth week,K4 cryoprotectant concentrations and types of sardine (I2K3), with a yield of surimi 71,43%, 72,03% moisture content, proteincontent 26,26%, ash content 0,98%, pH 6,76, 4,00 folding test, organoleptic color (4 (white) and 4 texture (chewy)).Key words: Surimi, fish leubim and sardines, cryoprotectant, storage.
