ELECTRONIC THESIS AND DISSERTATION UNSYIAHTITLEANALISIS KONDISI MUTU FISIK BIJI KOPI ARABIKA GAYO DALAM SEPULUH TAHUN TERAKHIRABSTRACTKopi Arabika Gayo merupakan salah satu kopi unggulan Indonesia di pasar domestik maupun internasional karena memilikikarakteristik citarasa kopi yang spesifik dan telah banyak diekspor ke luar negeri. Pada umumnya mutu kopi dipengaruhi olehbeberapa faktor seperti varietas, iklim, ketinggian tempat, kesesuaian lahan, serta penanganan pra dan pasca panen. Penelitian inibertujuan untuk mengetahui perkembangan mutu fisik biji kopi Arabika Gayo dalam kurun waktu sepuluh tahun terakhir (2004 â€“2013). Penelitian ini dilakukan dengan metode menganalisa data sekunder di Kabupaten Aceh Tengah dan Bener Meriah. Data akandiklasifikasikan berdasarkan ketinggian tempat tumbuh dan tahun. Data-data yang telah terkumpul diolah dan dianalisis denganmenggunakan analisis deskriptif. Hasil survey data menunjukkan bahwa kadar air biji kopi di tingkat petani, pengumpul ataukoperasi cenderung menurun. Pada tahun 2004 kadar air sebesar 18,61% sedangkan tahun 2013 menurun hingga 16,10%. Hasilsurvey data menunjukkan bahwa tingkat cacat biji kopi cenderung meningkat. Pada tahun 2004 tingkat cacat biji kopi sebesar13,24% sedangkan pada tahun 2013 meningkat hingga 18,89%. Dari data survey diketahui bahwa ukuran biji screen 16 relatifkonstan setiap tahunnya. Pada tahun 2004 persentase ukuran biji kopi sebesar 54,92% pada tahun 2013 persentase ukuran biji kopimenurun menjadi 55,27%.Gayo Arabica coffee is one of the leading Indonesian coffee in the domestic and international markets as it has the characteristics ofa specific coffee flavors and has been widely exported abroad. In general, the quality of coffee is influenced by several factors suchas variety, climate, altitude, land suitability, as well as pre and post-harvest handling. This study aims to determine the developmentof physical quality Arabica coffee beans Gayo within the last ten years (2004 to 2013). This study was conducted by analyzingsecondary data in Aceh Tengah and BenerMeriah district. Data will be classified by altitude grows and years. The data that havebeen collected was processed and analyzed using descriptive analysis. Results of survey data showed that the moisture content ofthe beans at the farm level, the collector or cooperatives tend to decline. In 2004 the water content of 18.61%, while in 2013decreased to 16.10%. Results of the survey data showed that the rate of defective coffee beans tend to increase. In 2004 the rate ofdefective coffee beans amounted to 13.24%, while in 2013 increased to 18.89%. From the survey data, it is known that seed sizescreen 16 relatively constant each year. In 2004 the percentage of the size of the coffee beans by 54.92%, while in 2013 thepercentage of the size of coffee beans fell to 55.27%.
