Abstract
Industrias Alimenticias Carolina S.A.S es una empresa llanera ubicada en la ciudad de Villavicencio ,en el departamento del Meta, perteneciente al sector industrial de transformación que incluye todas las actividades relacionadas con el envasado de legumbres y frutas, embotellado de refrescos, fabricación de abonos y fertilizantes, vehículos, cemento, entre otros. Indacarol (abreviación por sus siglas) está dedicada en la actualidad a la transformación de pulpa congelada y jugos de fruta 100% natural, libres de aditivos y conservantes. El proceso para desarrollar este trabajo comprendió el avance de dos etapas: la preliminar y la de desarrollo. La etapa preliminar comprendió la documentación de la problemática actual de la empresa Industrias Alimenticias Carolina S.A.S, así como los referentes teóricos para la fundamentación del desarrollo del modelo de Lean Manufacturing en la empresa. Posteriormente, la etapa de desarrollo se estructuró en tres fases: la primera enfocada en el diagnóstico inicial de la empresa en cuanto al desarrollo del modelo de Lean Manufacturing en el proceso de producción de pulpa y jugos de fruta, la segunda fase en la implementación y análisis de las herramientas de Lean Manufacturing y la tercera en la comparación de resultados y la retroalimentación a la empresa.Industrias Alimenticias Carolina SAS is a llanera company located in the city of Villavicencio, in the department of Meta, belonging to the industrial transformation sector that includes all activities related to the packaging of vegetables and fruits, bottling of soft drinks, manufacture of fertilizers and fertilizers , vehicles, cement, among others. The process to develop this work comprised the advance of two stages: the preliminary and the development. The preliminary stage included the documentation of the current problems of the company Industrias Alimenticias Carolina S.A.S, as well as the theoretical references for the foundation of the development of the Lean Manufacturing model in the company.
