Abstract
对花生红衣素的性质及其稳定性进行研究,结果表明,花生红衣素为兼有酮、酚性质的物质,耐光、耐热、耐酸不耐碱、耐还原剂(Na2SO3)不耐氧化剂(H2O2),在Zn^2+、Fe^2+、Fe^2+、Cu^2+离子条件下不稳定,而对K^+、Mg^2+、Ca^2+离子则稳定,对蔗糖、葡萄糖和食盐等常用添加剂和对羟基苯甲酸甲酯、苯甲酸钠等防腐剂表现出较好的稳定性
