DEMAND FOR NUTRIENTS: THE HOUSEHOLD PRODUCTION APPROACH

Abstract

The household production approach is used to characterize the household's preference toward nutrients in food consumption. Elasticities of substitution and Hicksian price elasticities are estimated, price- and expenditure-nutrient elasticities are calculated.
