El presente trabajo de investigación tiene como objetivo principal implementar y estandarizar un método analítico confiable para la determinación de azúcares totales en matrices alimenticias complejas, utilizando refractometría digital. Para alcanzar este objetivo, se desarrolló un procedimiento específico que incluyó la preparación de patrones, análisis de diversas concentraciones (1%, 5%, 10%, 25% y 50%) y validación estadística mediante análisis de varianza (ANOVA).
Los resultados obtenidos demuestran que el método desarrollado es efectivo y consistente, permitiendo medir con precisión los azúcares totales en matrices como extracto de naranja, pulpa de mango y té negro.The primary objective of this research is to implement and standardize a reliable analytical method for determining total sugars in complex food matrices using digital refractometry. To achieve this, a specific procedure was developed, including the preparation of standards, analysis of various concentrations (1%, 5%, 10%, 25%, and 50%), and statistical validation through analysis of variance (ANOVA).
The results demonstrate that the developed method is effective and consistent, enabling precise measurement of total sugars in matrices such as orange extract, mango pulp, and black tea. Furthermore, the procedure's adaptability to different concentration scenarios and its ability to ensure homogeneous and controlled readings are highlighted. This work significantly contributes to compliance with Ecuadorian regulations, such as Technical Regulation INEN 022, and strengthens the CESECCA laboratory's capacity to diversify its service offerings
