Verfasserin bestimmte mit der Osazon-papierchromatographischen Methode den Dehydroascorbinsäure- und Gesamtascorbinsäuregehalt von — aus dem Handel und dem Zentralen Laboratorium für Qualitätskontrolle des LandesGefreiers-Betriebes bezogenen, pro Art je 10 frischen und schnellgefrorenen Obstproben. Nach ihren Versuchsergebnissen ist der Gesamtascorbinsäuregehalt des schnellgefrorenen Obstes geringer und innerhalb desselben das Verhältnis der Dehydroascorbinsäure grösser als im frischen Obst. Die schnellgefrorene Birne, Aprikose, Pfirsich und Pflaume enthält Vitamin C nur in Form von Dchydroascorbinsäure. The contents of dehydroascorbic acid and total ascorbic acid were determined by the authors by means of the osazone paper chromatographic method, in a series of 10 samples taken from each type of quick-frozen and fresh fruits in commeriacl market and from the Central Quality Control Laboratory of the National Undertaking of Freezing Industry. According to the experimental results, the quick-frozen fruits showed lower contents of total ascorbic acid and within this range, a higher proportion of dehydroascorbic acid than the fresh fruits. In quick-frozen pears, apricots, peaches and plums, vitamin C was present only as dehydroascorbic acid.
