Este proyecto de investigación presentará una propuesta de revitalización de la
gastronomía de la parroquia Simiatug del cantón Guaranda, provincia de Bolívar,
conociendo la variedad gastronómica de la parroquia a través de una investigación
bibliográfica y de campo, en las cuales se identificará la variedad de productos
agropecuarios de la parroquia y se recopilará las principales recetas tradicionales
de la parroquia más antigua de Guaranda, donde tiene lugar la compra y venta de
granos, verduras, frutas y animales, más grande de Bolívar y una de las más
importantes de la región.
Por lo que esta investigación permitirá satisfacer una parte de la demanda actual
poblacional que busca conocer y explorar nuevas culturas, tradiciones y actividades
diarias de una localidad; y permitirá también reavivar la gastronomía de la parroquia
rural Simiatug, la cual es rica en tradiciones y cultura, y además está conformada
por una población mayoritariamente indígena que mantiene todos sus rasgos
intactos, aunque sus habitantes disminuyen con el paso del tiempo, ya que las
nuevas generaciones prefieren vivir en las ciudades industrializadas.
Es importante recalcar que la recopilación de recetas tradicionales de una cultura
ancestral aportaría al incremento del conocimiento de la cultura gastronómica del
Ecuador; además de dar a conocer a más personas, un pueblo pequeño que está
lleno de historia y que puede convertirse en una potencia turística si se revivifica su
gastronomía principalmente. Tomando como opción la revitalización mediante
palabras escritas que se difundirán, se aplicarán y nunca se perderán.

and will also revive the gastronomy of the rural parish Simiatug, which is rich in
traditions and culture, and is also made up of a mostly indigenous population that
keeps all its features intact, although its inhabitants decrease with the passage of
time, since the new generations prefer to live in industrialized cities.
It is important to emphasize that the collection of traditional recipes of an ancestral
culture would contribute to the increase of knowledge of the gastronomic culture of
Ecuador; in addition to making known to more people, a small town that is full of
history and that can become a tourist power provided that its gastronomy is revived
mainly. Taking as an option the revitalization through written words that will be
disseminated, will be applied and will never be lost.
