Proposal of an alternative for technological improvement for the combustion system of a rural community sugar mill in the inspection of Mámbita (Cundinamarca)

Abstract

Esta investigación propuso alternativas de mejoramiento tecnológico para la hornilla del sistema de producción rural tradicional de panela en un trapiche comunitario en la inspección de Mámbita (Cundinamarca). Se caracterizó el proceso de producción de panela rural a través de la realización de entrevistas estructuradas a 10 productores locales de la región, a partir de la información brindada se identificaron los procesos, se analizaron las etapas y se establecieron los flujos del sistema. Con esta información se procedió a verificar el estado actual de la hornilla por medio de una matriz de calificación que evaluó sus componentes estructurantes. Como resultado se obtuvieron las variables críticas que afectan el proceso y los componentes a mejorar en el sistema de combustión para hacerlo más eficiente. Los cambios sugeridos responden a las necesidades locales en términos de diseño y materiales, y no alteran la sistemática propia del proceso rural lo que evita que se pierda el carácter tradicional de mismo.This research proposed alternatives for technological improvement for the stove of the traditional rural production system of panela in a community sugar mill in the province of Mámbita (Cundinamarca). The rural panela production process was characterized through structured interviews with 10 local producers in the region, from the information provided the processes were identified, the stages were analyzed and the system flows were established. With this information, the current state of the stove was verified by means of a qualification matrix that evaluated its structuring components. As a result, the critical variables that affect the process and the components to be improved in the combustion system to make it more efficient were obtained. The suggested changes respond to local needs in terms of design and materials, and do not alter the system of the rural process itself, which prevents it from losing its traditional character.Fundación Ingenial Colombi
