Abstract

The present review updates the aspect of the genus fungus Aspergillus and the toxicology characteristics the aflatoxins produce. Physical-chemical aspects of the aflatoxins, pathways to the organism and the problems caused by contact and ingestion are briefly described. Moreover, the analysis techniques used to determine the presence of aflatoxin and the preventive measurements that should be applied in the facilities where cereals are processed or handled in order to avoid sanitary problems either in human beings or animals, are mentioned.En este trabajo se referencian aspectos relacionados con el desarrollo de hongos del género Aspergillus y las características toxicológicas de las aflatoxinas que producen. Se describen brevemente aspectos físico químicos de las aflatoxinas, las vías de ingreso al organismo, los problemas provocados por contacto e ingestión. Se mencionan las técnicas de análisis empleadas para determinar la presencia de aflatoxinas y las medidas preventivas que se deben implementar en los establecimientos donde se manipulan o procesan cereales para evitar problemas sanitarios tanto en humanos como en animale
