La globalización y el desarrollo industrial ha supuesto que cada vez exista una mayor preocupación por el medio
ambiente y que, por tanto, cada vez los estudios medioambientales tengan una mayor importancia tanto para la
sociedad como para el mundo empresarial.
Así pues, se pretende hacer un análisis medioambiental del proceso productivo del Acetite de Oliva, ya que el
sector oleícola es uno de los sectores más destacados en la Agricultura española y, en concreto, en la agricultura
andaluza.
Para ello, se da a conocer el ciclo productivo al completo, desde que se plantan los olivos hasta que se cosechan
las aceitunas y se produce el aceite para el consumo, mostrando lo que esto supone para el medio ambiente
mediante un estudio de la huella de carbono parcial.
La realización del estudio medioambiental de la huella de carbono parcial se centrará en la producción de aceite
de dos parcelas de olivos concretas, situadas en la localidad de Osuna (Sevilla), trabajando con varias empresas
de la zona expertas en el sector y analizando una almazara situada en la misma localidad.
Para ello se analizan las distintas labores que se han llevado a cabo desde la plantación de los olivos hasta la
cosecha a pleno rendimiento, y se estudia el proceso productivo de la molturación de aceite y el envasamiento
en la almazara.
Con todo esto, se calcula la huella de carbono parcial del ciclo productivo oleícola, siguiendo la norma
UNE-EN ISO 14067, para la fase de plantación y tratamiento de los olivos, cosecha y molturación y
envasamiento del aceite.Globalization and industrial development have meant that there is increasing concern for the environment and,

Thus, the aim is to carry out an environmental analysis of the olive oil production process, since the olive oil

harvested and the oil is produced for consumption, showing what this means for the environment through a study
of the partial carbon footprint.
The environmental study of the partial carbon footprint will focus on the production of oil from a plot of olive
trees, specifically located in the town of Osuna (Seville), working with several companies in the area that are
experts in the sector and analyzing an oil mill located in the same town.
To this end, the different tasks that have been carried out from the planting of the olive trees to harvesting at full
capacity are analyzed, and the production process of oil milling and packaging in the oil mill is studied.
With all this, the partial carbon footprint of the olive production cycle is calculated, following the
UNE-EN ISO 14067 standard, for the phase of planting and treatment of the olive trees, harvesting and milling
