Nutritional properties of yellow mombin (Spondias mombin L.) pulp.

Yellow mombin (Spondias mombin L.) is a tropical fruit with increasing acceptance in both national and international fruit markets. The aim of this work was to evaluate the centesimal composition, mineral content, total phenolics, antioxidant activity, and characterize the carotenoids of frozen yellow mombin pulp. Results indicated that the yellow mombin pulp contained an important amount of potassium and copper. The antioxidant activity and total phenolic values scored 17.5 mmol TEAC g−1 and 260 mg galic acid/100 g respectively, higher than those reported for other fruits. Five carotenoids were identified, β-cryptoxanthin, lutein, zeinoxanthin, α and β carotene, being β-cryptoxanthin the major one, accounting for the high level of pro-vitamin A activity in the pulp. A 100 g portion of yellow mombin pulp can provide more than 37% of the recommended daily allowance of vitamin A

Efeito da alta pressão hidrostática sobre o teor de carotenoides em queijo minas frescal incorporado com cenoura.

Responsável pelas cores entre amarelo e o vermelho de vegetais, os carotenóides destacam-se pelas suas propriedades pró-vitamina A e antioxidantes, atuando na prevenção de doenças crônicas e degenerativas. O objetivo do estudo foi promover a adição desses pigmentos em queijo minas, através da incorporação da cenoura, e aplicação da alta pressão hidrostática para preservação e ampliação da vida útil de um produto diferenciado com apelo de saudabilidade. Os queijos foram produzidos com 0, 3 e 6 % de cenoura e processados a pressões de 0, 250 e 500 MPa. Foram determinados o teor de carotenóides totais, luteína, α-caroteno e β-caroteno. A pressurização não afetou de forma significativa o teor de carotenóides totais e o perfil cromatográfico, mantendo o queijo processado com concentrações consideráveis destes compostos bioativos.Food: the tree that sustains life. 1497
