Mikotoxinok előfordulása takarmányokban
A takarmányok káros anyagokat (toxikus elemeket, növĂ©nyvĂ©dĹ‘szermaradĂ©kokat, mikotoxinokat) tartalmazhatnak, amelyek bekerĂĽlve az állati szervezetbe a szövetekben, vĂ©rben feldĂşsulva egĂ©szsĂ©gkárosĂtĂł hatásĂşak, ami az állati termĂ©ket fogyasztĂł embert is megbetegĂthetik. Takarmánybiztonsági szempontbĂłl világszerte kiemelt jelentĹ‘sĂ©ge van a szántĂłföldi Ă©s raktári penĂ©szgombák termelte mikotoxinoknak. Ă–sszefoglaltuk a mikotoxinok takarmányokban valĂł elĹ‘fordulására vonatkozĂł szabályozást a világ kĂĽlönbözĹ‘ rĂ©szein, kĂĽlönös tekintettel az EurĂłpára Ă©rvĂ©nyes szabályozásra. Fontos szempont, hogy a szabályozási szinteknek megfelelĹ‘ megbĂzhatĂł laboratĂłriumi vizsgálati mĂłdszerek álljanak rendelkezĂ©sre. A mikotoxinok vizsgálatára többfĂ©le mĂłdszer is alkalmazhatĂł: a nagyhatĂ©konyságĂş folyadĂ©k-kromatográfia (HPLC), az ELISA, Ă©s vĂ©konyrĂ©teg-kromatográfia (TLC). A mĂłdszerek használatárĂłl Ă©s megfelelĹ‘sĂ©gĂĽkrĹ‘l többek között az OMMI Központi LaboratĂłriuma által rendszeresen szervezett körvizsgálatok adnak Ă©rdemi informáciĂłt. Az OMMI Központi LaboratĂłriumban Ă©vrĹ‘l-Ă©vre növekvĹ‘ mintaszámmal vizsgálják a takarmány-alapanyagok Ă©s takarmánykeverĂ©kek mikotoxin szennyezettsĂ©gĂ©t. A 2003-tĂłl 2006. szeptember vĂ©gĂ©ig terjedĹ‘ idĹ‘szakban kapott Ă©s feldolgozott mĂ©rĂ©si adatok: zearalenonra, trichotecĂ©n toxinokra, ochratoxin A-ra, aflatoxin B1-re vonatkozĂłan jĂłl Ă©rzĂ©keltetik az Ă©vek közötti változásokat, lehetĹ‘sĂ©get adnak a hatĂłsági ellenĹ‘rzĂ©si szempontok Ă©s tervek megalapozott összeállĂtásához. The feeding stuffs may contain toxic substances, as toxic elements, pesticide residues, mycotoxins, which could cause deleterious effect, diseasing the person consuming the animal products. In respect of feed safety, the mycotoxins produced by the field and warehouse mildew have great importance worldwide. We present the world-wide regulation connected with the mycotoxins occurred in feeds, in particular the European legislation. It’s an important aspect that reliable laboratory testing methods have to be available according to the regulated level. Various methods can be applied to analyze mycotoxins, among others, the ring tests commonly organized by OMMI Central Laboratory give substantive information about the application and the conformance of the High Performance Liquid Chromatography (HPLC), the ELISA and the Thin-Layer-Chromatography (TLC) methods. We analyze the contamination of mycotoxins in the feeds year by year in increasing number in the OMMI Central Laboratory. The measured and processed results of the period of 2003 and September 2006 in the respect of Zearalenone, trichotecene toxins, Ochratoxin A, Aflatoxin B1 show well the changes between years, and give opportunity to compile effectively the views, and plans of the authority control
Élelmiszerek akrilamidtartalma a monitoring vizsgálati eredmények tükrében = Acrylamide content of foods in the light of monitoring results
Az akrilamid karcinogĂ©n (Ă©s genotoxikus) hatását állatkĂsĂ©rletekben igazolták. A mĂ©anyagiparban alapanyagkĂ©nt használt vegyĂĽletre fokozott nemzetközi figyelem irányul, kĂĽlönösen miĂłta 2002-ben megjelent, hogy az akrilamid az Ă©lelmiszerekben termĂ©szetes mĂłdon jelenlĂ©vĂĄ anyagokbĂłl (aszparagin Ă©s redukálĂł cukrok) is keletkezhet. A vegyĂĽlet egĂ©szsĂ©gre káros hatásával Ă©s az Ă©lelmiszerekben lĂ©vĂĄ szintjeinek csökkentĂ©sĂ©vel több tudományos szervezet foglalkozik. A FAO Ă©s a WHO közös szakĂ©rtĂĄi testĂĽletĂ©nek (JECFA) vĂ©lemĂ©nye szerint a jelenlegi becsĂĽlt Ă©trendi bevitel az emberi egĂ©szsĂ©g szempontjábĂłl aggodalomra adhat okot, Ă©s további adatok ismeretĂ©ben ĂşjraĂ©rtĂ©kelĂ©se szĂĽksĂ©ges. Annak Ă©rdekĂ©ben, hogy kedvelt Ă©lelmiszereinkben csökkentsĂĽk ennek a toxikus vegyĂĽletnek a mennyisĂ©gĂ©t, számos szervezet (pl. CIAA, DG SANCO, Codex) jelentetett meg önkĂ©ntesen alkalmazhatĂł gyakorlati ĂştmutatĂłkat. Ezek hatĂ©konyságának felmĂ©rĂ©sĂ©re illetve az akrilamidszintek adatgyĂ©jtĂ©sĂ©re irányul a 2007-ben kiadott bizottsági ajánlás (2007/331/EK). Ennek alapján benyĂşjtott vizsgálati eredmĂ©nyeket az EurĂłpai Élelmiszer-biztonsági Hivatal (EFSA) Ă©vente Ă©rtĂ©keli. Hazánkban az MgSzHK ÉTbI laboratĂłriuma vĂ©gzi az ajánlásban elĂĄĂrt tĂz termĂ©kkategĂłriában a megadott számĂş minták vizsgálatát. Ă–sszessĂ©gĂ©ben elmondhatĂł, hogy a nemzeti Ă©s az eurĂłpai Ă©ves átlagok között jelentĂĄs kĂĽlönbsĂ©gek vannak, de a csekĂ©ly mintaszám miatt kvantitatĂv következtetĂ©sek nem vonhatĂłk le azokbĂłl. A Magyar Élelmiszer-biztonsági Hivatal fontosnak tartja felhĂvni a figyelmet, hogy az összes Ă©rintett Ă©lelmiszer gyártĂłja tudatosan Ă©s felelĂĄssĂ©ggel keresse a termĂ©kei akrilamidszintjĂ©nek csökkentĂ©si lehetĂĄsĂ©geit, mivel a fogyasztĂłk biztonsága Ă©rdekĂ©ben az ipar/gyártĂłk Ă©s a hatĂłság összefogása, egyĂĽttmĂ©ködĂ©se e tĂ©ren is elengedhetetlen. The genotoxic and carcinogenic effects of acrylamide have been proven in animal studies. This industrial raw material has been gaining increased attention internationally, especially since it was published in 2002, that acrylamide could be formed from natural substances occuring in food (asparagine, reducing sugars) as well. Several scientific bodies deal with the adverse health effect and possible reduction of acrylamide levels in food. According to the opinion of the joint expert committee (JECFA) of FAO and WHO, the estimated dietary intake of the compound gives rise to human health concern, and its reevaluation will be needed in the light of new data. In order to reduce the levels of this toxic substance in our popular foods, several organisations (e.g. CIAA, DG SANCO, Codex) have published voluntarily applicable practical guidelines. The assessment of their efficiency and data collection on acrylamide levels were targeted in Recommendation (2007/331/EC) issued by the Commission in 2007 specifying the types and number of samples to be analysed by Member States. In Hungary, the laboratory of Central Agricultural Office, Food and Feed Safety Directorate is appointed to analyse the samples in 10 food categories. The relevant monitoring data submitted from the member states is evaluated annually by the European Food Safety Authority (EFSA). To summarize the available information, there are substantial differences between the arithmetic means of data from Hungary and Europe, but due to limited number of samples, drawing quantitative conclusions is impossible. The Hungarian Food Safety Office emphasizes, that the producers of all relevant food articles should work consciously and responsibly on mitigation of acrylamide levels in their products, and the cooperation of industry and the authorities is essential for assuring the safety of the consumers
