Jack-O-Lantern Stuffed Peppers

For Halloween 2020, Juliana L\u27Heureux and her husband Richard got creative with their meal prep, creating Jack-O-Lantern style stuffed peppers. Juliana says: In the COVID-19 environment, we are preparing many more creative recipes at home, rather than eating out. These peppers can be stuffed with any favorite mixture or vegan combo. We use lean ground beef (90 percent lean) sautéed with onion, garlic, cooked rice and diced tomatoes- salt and pepper to taste. We blanched the peppers after carving the faces, using a very small carving knife. Bake in pre-heated oven at 350 degrees F for 25-30 minutes.
